Essential Ingredients for Your Homemade Chicken Chili

Gathering your ingredients is the first step towards creating this delightful chicken chili. Here’s a comprehensive list of what you’ll need, with full measurements detailed in the recipe card below:

  • Shredded Chicken: The star of our chili! For ultimate convenience, use pre-cooked shredded chicken, such as a store-bought rotisserie chicken, which significantly cuts down on prep time. Leftover cooked chicken or turkey also works wonderfully, making this a fantastic recipe to utilize Thanksgiving leftovers. If you prefer, you can also cook and shred your own chicken breasts.
  • Olive Oil: Essential for sautéing our aromatic vegetables, olive oil provides a healthy and flavorful base. Avocado oil is an excellent alternative if you prefer.
  • Sweet Onion: A finely diced sweet onion adds a foundational layer of mild sweetness and pungent flavor, which is crucial for building the chili’s overall depth.
  • Red Bell Pepper: Chopped red bell pepper contributes a vibrant color, a subtle sweetness, and a delightful crunch to the chili. Feel free to use any color of bell pepper you have on hand – yellow, green, or orange will all work beautifully.
  • Garlic Cloves: Minced garlic is a non-negotiable ingredient, adding an incredible depth of savory flavor. Don’t be shy; if you’re a true garlic aficionado, a little extra will only enhance the chili’s deliciousness!
  • Diced Tomatoes: Canned diced tomatoes provide a tangy, robust tomato base that is characteristic of a classic chili. Their natural acidity helps to balance and brighten all the rich flavors in the pot.
  • Chicken Broth: The liquid base for our chili, chicken broth infuses the dish with savory chicken flavor. For a vegetarian option or if you only have it available, vegetable or turkey broth can be substituted. Opt for low-sodium varieties if you’re monitoring your salt intake.
  • Black Beans: Rinsed and drained black beans are a powerhouse of plant-based protein and fiber, adding a wonderful creamy texture and heartiness. Experiment with other bean varieties like pinto beans, Great Northern beans, or cannellini (white) beans for a different twist.
  • Sweet Corn: Whether fresh, frozen, or canned, sweet corn brings a burst of natural sweetness and pops of texture to the chili. If using frozen corn, ensure it’s thawed before adding to the pot.
  • Seasoning Blend: A carefully crafted blend of chili powder, ground cumin, dried oregano, and a touch of chili flakes creates the signature warm, earthy, and mildly spicy flavor profile that elevates this chili from good to truly exceptional. Sea salt and freshly ground black pepper tie all these magnificent flavors together.

Crafting Your Chicken Chili: A Simple Guide

This delectable chicken chili comes together in just a few straightforward steps, making it perfect for novice cooks and seasoned chefs alike:

  • Step 1: Sauté the Aromatics – Begin by heating a tablespoon of olive oil in a large pot or Dutch oven over medium-high heat. Add your diced sweet onion, chopped bell peppers, and minced garlic. Sauté gently for 5-7 minutes, stirring occasionally, until the vegetables soften and become fragrant. This step is crucial for developing a rich flavor base for your chili.
  • Step 2: Simmer to Perfection – Once the vegetables are tender, stir in the black beans (rinsed and drained), sweet corn (thawed if frozen), diced tomatoes (undrained), chicken or turkey broth, and your pre-shredded chicken (or turkey). Add the chili powder, ground cumin, dried oregano, and chili flakes. Give everything a good stir to combine. Reduce the heat to low, cover the pot, and let it simmer for approximately 15-20 minutes. This allows all the incredible flavors to meld beautifully and the chili to thicken to a perfect consistency.
  • Step 3: Season and Serve – After simmering, taste the chili and adjust the seasoning as needed, adding sea salt and freshly ground black pepper to your preference. Ladle the hot chili into bowls, add your favorite garnishes, and prepare to enjoy a truly satisfying meal! It’s that easy to create a masterpiece that will have everyone asking for seconds.

The Ultimate Toppings Bar for Your Chili

No bowl of chili is truly complete without a generous array of toppings! These additions not only enhance the flavor and texture but also allow everyone to customize their bowl to perfection. Here are some of the most popular and delicious options:

  • Fresh Citrus: A squeeze of fresh lemon or lime juice adds a bright, zesty counterpoint that can cut through the richness of the chili beautifully.
  • Shredded Cheese: A classic for a reason! Sharp cheddar, Monterey Jack, or spicy jalapeño cheddar melt wonderfully and add a creamy, tangy element.
  • Creamy Avocado: Cubed or sliced avocado offers a cool, buttery texture that contrasts perfectly with the warm, spicy chili.
  • Fresh Herbs: A sprinkle of fresh chopped cilantro adds a burst of freshness and a vibrant herbaceous note.
  • Crunchy Elements: Crumbled tortilla chips, corn chips, or crispy tortilla strips provide a satisfying crunch that makes every bite more enjoyable.
  • Dairy Delights: A dollop of cool sour cream or a healthier alternative like Greek yogurt adds a creamy, cooling contrast to the chili’s warmth and spice.
  • Aromatic Onions: Thinly sliced green onions (scallions) offer a mild oniony bite and a pop of color, while finely diced red onions can add a sharper, more pungent flavor.
  • A Touch of Heat: Sliced jalapeños (fresh or pickled) provide a welcome kick. For less heat, remove the seeds and ribs before slicing. Green chiles (canned, diced) can also add a milder, earthy heat.
  • Salsa Verde: A spoonful of tangy salsa verde introduces a bright, zesty, and slightly spicy dimension that complements the chili’s robust flavors.

Frequently Asked Questions

What to serve with this chicken chili recipe?

This chicken chili is incredibly satisfying on its own in a big bowl. However, if you’re looking to make it even heartier or to complement its rich flavors, consider serving it alongside fluffy brown rice. For those aiming to keep carbohydrate intake lower, Cilantro Lime Cauliflower Rice is a fantastic, flavorful option. Additionally, a slice of warm cornbread is absolutely perfect for soaking up every last drop of that delicious sauce! Don’t miss our amazing Homemade Jalapeño Skillet Cornbread for a spicy kick.

How do I store this chili?

Storing your leftover chicken chili is simple and ensures you can enjoy it for days. Place any cooled leftovers in an airtight container and store it in the refrigerator for up to 5 days. When you’re ready to eat, simply reheat individual portions in the microwave until warmed through. This chili also freezes exceptionally well for longer-term storage.

Can I freeze this chicken chili?

Absolutely! This chicken chili is an excellent candidate for freezing, making it perfect for meal prep or saving for future busy days. To freeze, first allow your chili to cool completely in the refrigerator. Once chilled, transfer it to freezer-safe containers or heavy-duty freezer bags. You can freeze it in single-serving portions for convenient reheating. It will maintain its quality in the freezer for up to 3 months. Remember to thaw overnight in the refrigerator before reheating.

Can I make it vegetarian?

Yes, adapting this recipe for a vegetarian diet is very straightforward! Simply omit the shredded chicken entirely. For the broth, replace chicken broth with an equal amount of good quality vegetable broth. You can also boost the protein and heartiness by adding extra beans (like kidney beans or chickpeas) or more vegetables, such as diced zucchini, sweet potatoes, or mushrooms, to make it even more filling.

Slow Cooker / Crockpot Method for Chicken Chili

For those days when you want to set it and forget it, this chicken chili adapts beautifully to a slow cooker or Crockpot. Enjoy a warm, comforting meal with minimal hands-on effort:

Using Cooked or Leftover Chicken: Combine all the listed ingredients into your slow cooker. Give everything a good stir to ensure it’s well combined. Cover and cook on either LOW for 6-7 hours or HIGH for 3-4 hours. The flavors will deepen beautifully as it simmers throughout the day.

Using Raw Chicken Breast: For a hands-off approach with raw chicken, add the raw chicken breasts, diced onion, bell peppers, minced garlic, spices, and chicken broth to the slow cooker. Stir lightly to mix. Cover and set your slow cooker to cook on HIGH for 3 hours or LOW for 5 hours. The chicken should be perfectly tender and easy to shred with a fork right in the pot. If you desire a creamy version, this is the perfect time to stir in about 1/4 cup of cream cheese (softened and whisked with a little warm water to prevent clumping). Next, add the rinsed and drained black beans and corn. Taste and adjust the salt and pepper as needed. Close the lid once more and continue to cook on LOW for an additional 2 hours or on HIGH for one hour, allowing all the flavors to fully meld and the chili to thicken.

Storing and Reheating Your Delicious Chili

Efficient storage and reheating are key to enjoying your chicken chili long after it’s made:

  • To Store: Allow the chili to cool completely before transferring it to an airtight container. It will keep fresh in the refrigerator for up to 5 days. For longer storage, this chili freezes exceptionally well. Place cooled chili in a freezer-safe dish or heavy-duty freezer bags and freeze for up to 3 months. Label with the date for best practice.
  • Reheating: For a single serving, simply scoop the chili into a microwave-safe bowl and heat for 1-2 minutes, stirring halfway through, until it’s piping hot. To reheat a larger batch on the stovetop, transfer the chili to a saucepan over medium heat. Stir occasionally and allow it to heat through for 10-15 minutes, or until bubbling. If reheating from frozen, it’s best to thaw the chili in the refrigerator overnight before warming. Alternatively, you can defrost it in the microwave using the defrost setting and then reheat as usual.

Expert Tips and Savvy Substitutions for Your Chili

Elevate your chicken chili with these helpful tips and flexible substitutions:

  • Time-Saving Chicken: To make this recipe even faster, always consider using a pre-cooked rotisserie chicken from the grocery store. It’s a fantastic shortcut! Alternatively, repurpose any leftover cooked chicken or turkey you have on hand.
  • Cook Your Own Chicken: If you prefer, you can easily roast, pan-fry, or poach chicken breasts and then shred them yourself for ultimate freshness and control over seasoning.
  • Protein Flexibility: While shredded chicken is a highlight, feel free to substitute with other proteins. Ground turkey, ground chicken, or even ground beef can be used for a different flavor profile. Just cook the ground meat thoroughly before adding the other ingredients.
  • Boost the Chili Flavor: For an even more robust and authentic chili flavor, consider stirring in 4 ounces of canned diced green chiles (mild or hot, depending on preference) or a few spoonfuls of your favorite salsa verde. These additions bring extra depth and a tangy kick.
  • For a Creamy Indulgence: If you enjoy a richer, creamier chili, try adding some cream cheese. In a small bowl, whisk about 1/4 cup of softened cream cheese with a little warm water (or broth from the chili) until smooth. Stir this mixture into the chili about halfway through the simmering process, or about 10 minutes before it’s done, ensuring it fully melts and incorporates.
  • Mind Your Sodium: For those managing salt intake, always opt for low-sodium chicken broth and rinse canned beans thoroughly to reduce their sodium content. You can always add salt to taste at the end.
  • Lactose-Free Option: This recipe is naturally dairy-free as written. To keep it lactose-free, simply skip any dairy-based toppings like shredded cheese or sour cream. There are many delicious dairy-free alternatives available for toppings as well.
  • Vegan Adaptation: To transform this into a delicious vegan chili, simply omit the chicken and replace the chicken broth with vegetable broth. Increase the amount of beans (like kidney, pinto, or cannellini beans) or add extra vegetables such as diced sweet potato, zucchini, or mushrooms to ensure it remains hearty and satisfying.
  • Best Cheese for Melting: If using shredded cheese as a topping, for the best melting performance and flavor, we highly recommend shredding your own block of cheese. Pre-shredded cheeses often contain anti-caking agents that can prevent them from melting as smoothly and evenly.
  • Adjusting the Spice Level: The amount of chili flakes can be easily adjusted to suit your personal preference for heat. If you enjoy a spicier chili, feel free to increase the amount. For an extra fiery kick, a pinch of cayenne pepper can be added alongside the other spices.

  • 1 Sweet Onion, diced
  • 1 Red Bell Pepper, Chopped
  • 3 Garlic Cloves, minced
  • 15 ounces Diced Tomatoes, one can
  • 2 Cups Chicken or Turkey Broth
  • 1 (15oz) Can Black Beans, rinsed and drained
  • 1 1/2 Cup Frozen Sweet Corn (or 15 oz can), rinsed and drained
  • 1 teaspoon Chili Powder
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Dried Oregano
  • 1/2 teaspoon Chili Flakes
  • Sea salt and pepper, to taste

OPTIONAL TOPPINGS:

Instructions

  • Heat 1 tablespoon Olive Oil in a pot over medium-high heat. Add 1 Sweet Onion (diced), 1 Red Bell Pepper (chopped), and 3 Garlic Cloves (minced) and sauté until tender, 5-7 minutes.
  • Next, stir in the 1 (15oz) Can Black Beans, 1 1/2 Cup Frozen Sweet Corn (or 15 oz can), 15 ounces Diced Tomatoes, 2 Cups Chicken or Turkey Broth, 2 Cups Shredded Chicken or turkey, 1 teaspoon Chili Powder, 1 teaspoon Ground Cumin, 1 teaspoon Dried Oregano, and 1/2 teaspoon Chili Flakes. Lower the heat and simmer for about 15-20 minutes or until the chili thickens and flavors blend.
