Essential Ingredients for a Perfect Chicken Florentine

Exact measurements can be found in the comprehensive recipe card below.

Gathering fresh, quality ingredients is the first step to a memorable Chicken Florentine.
  • Chicken Breasts: We recommend using large chicken breasts, approximately 1.2 to 2.5 pounds, sliced horizontally to create thinner cutlets. This ensures even cooking and a quicker sear, resulting in tender, juicy chicken every time.
  • Aromatic Seasonings: A blend of garlic powder, salt, pepper, and classic Italian seasoning forms the foundational flavor profile. These spices infuse the chicken and sauce with that signature Mediterranean taste that makes Florentine so appealing.
  • Olive Oil: Essential for searing the chicken to a beautiful golden brown and sautéing the aromatics. Extra virgin olive oil adds a lovely depth, but any neutral oil like avocado oil can be used as a substitute.
  • Chicken Broth: The liquid base for our rich sauce. Chicken broth adds savory notes and helps deglaze the pan, capturing all the flavorful browned bits. Vegetable broth is a suitable alternative if preferred.
  • Flour (Thickener): A small amount of flour helps thicken the sauce to a luxurious consistency. We used a gluten-free option to keep the recipe adaptable, but all-purpose flour works perfectly. For a thicker, gluten-free alternative, cornstarch (mixed with a little liquid) can also be used.
  • Milk: Contributes to the creamy texture of the sauce. 2% milk is a great choice for richness without excessive fat, or for a lighter, dairy-free, or keto version, unsweetened almond milk is an excellent alternative.
  • Fresh Spinach: The star vegetable of any Florentine dish. Fresh baby spinach wilts beautifully into the sauce, adding a vibrant color and a boost of nutrients. If fresh isn’t available, thawed and well-drained frozen spinach can be used.
  • Parmesan Cheese: Freshly grated Parmesan cheese melts seamlessly into the sauce, adding a salty, nutty, and umami depth that is simply irresistible. Pre-grated Parmesan from the store also works well for convenience.
  • Fresh Garlic: Minced garlic cloves are crucial for imparting a fragrant, pungent flavor to the creamy sauce, elevating the overall taste profile. Don’t skip this!

How to Make The Best Creamy Chicken Florentine

Creating this flavorful Chicken Florentine is a straightforward process, broken down into simple steps. Follow this guide to achieve perfectly cooked chicken and a luscious, creamy spinach sauce.

Watch our step-by-step video guide for making Creamy Chicken Florentine.
  1. Prepare and Sear the Chicken: Begin by patting your chicken breasts dry with paper towels. Season both sides generously with garlic powder, salt, and black pepper. Heat 1 tablespoon of olive oil in a large skillet or pan over medium-high heat. Once the oil shimmers, carefully place the chicken cutlets in the skillet. Cook for 3-4 minutes per side, or until they develop a beautiful golden-brown crust and are cooked through to an internal temperature of 165°F (74°C). Remove the chicken from the pan and set it aside on a plate, tenting it with foil to keep it warm and allow the juices to redistribute.
  2. Sauté Garlic and Deglaze: Add the remaining 1 tablespoon of olive oil to the same skillet (no need to clean it – those browned bits are flavor!). Sauté the minced garlic for about 30 seconds, or until fragrant, being careful not to burn it. Pour in the chicken broth and add the Italian seasoning. Use a wooden spoon to scrape up any browned bits from the bottom of the pan; this process, called deglazing, adds immense flavor to your sauce. Bring the liquid to a simmer over medium heat and let it reduce by about half, concentrating the flavors.

  1. Craft the Creamy Sauce: While the broth reduces, whisk together the flour and milk in a small jug or bowl until completely smooth, ensuring there are no visible lumps. Once the broth has reduced, slowly pour the milk and flour mixture into the skillet, whisking constantly to combine. Continue to cook, stirring occasionally, until the sauce begins to thicken to your desired consistency.
  2. Add Spinach and Parmesan: Now, it’s time to incorporate the fresh elements. Add the fresh baby spinach to the pan. Stir gently until the spinach wilts down into the creamy sauce, which usually takes just a minute or two. Once wilted, stir in the grated Parmesan cheese until it melts and is fully incorporated, creating a rich and savory depth.
  3. Reunite Chicken and Sauce: Carefully return the cooked chicken breasts to the pan, nestling them into the creamy spinach sauce. Allow them to simmer for another 5-8 minutes, or until the chicken is thoroughly heated through and coated in the sauce. This final simmer ensures the chicken absorbs all the wonderful flavors of the Florentine sauce.
  4. Serve and Enjoy: Transfer the Chicken Florentine to serving plates. For an extra touch of indulgence, garnish with an additional sprinkle of freshly grated Parmesan cheese. Serve warm and savor every comforting bite!

Recipe Notes, Substitutes, and Expert Tips

Elevate your Chicken Florentine with these helpful notes, smart substitutions, and expert tips, ensuring a perfect dish every time.

  • Perfect Chicken Doneness: Always cook chicken until it reaches an internal temperature of 165°F (74°C). Use a meat thermometer for accuracy to ensure it’s safe to eat while remaining juicy.
  • Avoid Overcooking Chicken: Chicken breasts can dry out quickly. Cooking them just until they reach the correct internal temperature is key to tender, not rubbery, results.
  • Flavor Boosters: For an additional layer of tangy, briny flavor, consider stirring in a tablespoon or two of capers into the sauce alongside the spinach. A squeeze of fresh lemon juice at the end can also brighten the flavors beautifully.
  • Serving Versatility: This Chicken Florentine is incredibly versatile. It pairs wonderfully with classic Italian sides like gnocchi or pasta. For a low-carb option, serve it with cilantro lime cauliflower rice, zucchini noodles, or a simple green salad.
  • Protein Alternatives: While chicken breast is traditional, boneless, skinless chicken thighs can be used for an even juicier and richer flavor, though they will be slightly higher in fat and calories. Not a fan of chicken? This recipe adapts beautifully to other proteins! Consider using plump shrimp or exploring our Salmon Florentine recipe for a delicious pescatarian option.
  • Milk Choices: For those following a keto diet or looking for a lower-calorie option, unsweetened almond milk is highly recommended as it blends seamlessly into the sauce without altering the flavor profile. However, feel free to use 2% milk or any other milk of your choice; ensure it’s unsweetened if using plant-based options.
  • Spinach Prep: If using frozen spinach, ensure it is thoroughly thawed and squeezed dry to remove excess water. This prevents the sauce from becoming watery and diluting its rich flavor.

Frequently Asked Questions

Can I use frozen spinach?

Yes, absolutely! Frozen spinach works perfectly if that’s what you have on hand. For best results, make sure to thaw it completely and squeeze out as much excess water as possible before adding it to the sauce. This prevents the sauce from becoming watery.

How do I thicken the sauce if it didn’t thicken up enough?

If your sauce isn’t as thick as you’d like, you have a couple of options. You can whisk together a small amount of additional flour with an equal part of cold milk or water to create a slurry, then slowly whisk it into the simmering sauce. Alternatively, a cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons cold water) can be added gradually, stirring constantly, until the desired thickness is achieved.

Can I use coconut milk instead?

Yes, coconut milk can be used as a substitute for dairy milk. For the creamiest results, we recommend using canned full-fat coconut milk. Just be sure to use unsweetened coconut milk to maintain the savory flavor profile of the Florentine sauce.

Can I use salmon instead of chicken?

Absolutely! Salmon is a fantastic substitute for chicken in this recipe. The creamy spinach sauce pairs wonderfully with the rich flavor of salmon. In fact, we have a dedicated Salmon Florentine recipe that also includes delicious added mushrooms, if you’d like to try that variation.

How long does Chicken Florentine last in the fridge?

Leftover Chicken Florentine can be stored in an airtight container in the refrigerator for up to 3-4 days. It reheats well on the stovetop over medium-low heat or in the microwave, though the chicken may become slightly less tender.

Can I make this recipe dairy-free?

Yes, with a few substitutions, this recipe can easily be made dairy-free. Use unsweetened almond milk (or your preferred dairy-free milk alternative) and a dairy-free Parmesan cheese substitute. The flavor will be slightly different but still delicious.
