- 3 large sweet potatoes, for baking
- 2 tablespoons olive oil
- 1/4 cup cheddar cheese, shredded
- 6 large eggs
- 1/4 teaspoon black pepper
- 1/2 teaspoon kosher salt
- Chopped chives
