Essential Ingredients for Your Chicken Spinach Pasta

Crafting this flavorful chicken spinach pasta relies on a combination of fresh, high-quality ingredients that come together to create a harmonious and satisfying meal. Here’s a detailed look at what you’ll need to prepare this delightful dish (full measurements can be found in the recipe card below):

  • Pasta: The foundation of any great pasta dish! You can choose your favorite type – penne, fettuccine, rotini, or farfalle all work wonderfully. For a healthier or gluten-free option, consider whole wheat pasta, lentil pasta, or chickpea pasta. These alternatives not only offer different textures but also boost the fiber and protein content.
  • Chicken: Boneless, skinless chicken breasts are recommended for their leanness and quick cooking time. They absorb flavors beautifully and become incredibly tender. If you prefer, chicken thighs can also be used for a richer flavor, though they may require a slightly longer cooking time.
  • Seasonings: A simple yet powerful trio of salt, freshly ground black pepper, and Italian seasoning forms the core flavor profile for the chicken. Italian seasoning typically includes basil, oregano, rosemary, thyme, and marjoram, providing an aromatic Mediterranean essence.
  • Oil: High-quality olive oil is perfect for sautéing the chicken and aromatics, adding a subtle fruity note. Any neutral oil, such as avocado or grapeseed oil, can be used as a substitute if preferred.
  • Garlic: Fresh garlic is key to this recipe’s vibrant flavor. Minced garlic cloves release their pungent, aromatic oils when sautéed, forming the backbone of the sauce. While garlic powder can be used in a pinch, fresh garlic offers an unparalleled depth of flavor.
  • Sun-Dried Tomatoes: These concentrated bursts of umami are a game-changer in this dish. They come either dried in packets or packed in oil. While the packet variety works, those soaked in oil often deliver a more intense and complex flavor, as the oil itself becomes infused with tomato essence. Chop them finely to distribute their rich taste throughout.
  • Flour: A small amount of flour (all-purpose or gluten-free) is used to create a light roux, which helps to thicken the sauce, giving it that wonderfully creamy consistency without the need for heavy cream.
  • Milk: Your choice of milk forms the creamy base of the sauce. 2% dairy milk works perfectly, providing richness without being overly heavy. For a dairy-free alternative, unsweetened almond milk or oat milk can be used, ensuring a smooth and delicious sauce.
  • Shredded Parmesan Cheese: This adds a savory, salty, and slightly nutty depth to the sauce. Freshly grated Parmesan cheese melts more smoothly and offers a superior flavor compared to pre-shredded varieties, which often contain anti-caking agents.
  • Fresh Spinach: A generous amount of fresh spinach is added towards the end, wilting down quickly and incorporating vital nutrients and a lovely green color into the dish. It’s an easy way to sneak in extra vegetables.
  • Fresh Parsley: Minced fresh parsley serves as a beautiful and fragrant garnish, adding a touch of vibrant green and a fresh, herbaceous finish that brightens the entire dish.

Step-by-Step: How to Craft Chicken Spinach Pasta

Creating this delightful chicken spinach pasta is straightforward and doesn’t require advanced culinary skills. Follow these simple steps for a truly rewarding meal:

  • 1. Cook the Pasta: Begin by boiling your chosen pasta according to the package instructions. Aim for al dente – tender yet firm to the bite – as it will finish cooking in the sauce. Once cooked, drain the pasta but do not rinse it if you’re making a hot dish; the starch cling to the pasta helps the sauce adhere better. Set it aside.
  • 2. Season the Chicken: While the pasta cooks, prepare your chicken. Pat the boneless, skinless chicken breasts dry with paper towels to ensure a good sear. Generously season both sides with salt, freshly ground black pepper, and Italian seasoning, ensuring an even coating.

  • 3. Cook the Chicken: Heat the olive oil in a large skillet or pan over medium-high heat until shimmering. Carefully place the seasoned chicken breasts in the hot pan. Cook for about 6-8 minutes per side, or until they develop a beautiful golden-brown crust and are fully cooked through, reaching an internal temperature of 165°F (74°C). Remove the chicken from the skillet and let it rest on a cutting board for a few minutes before thinly slicing or dicing it. This resting period allows the juices to redistribute, keeping the chicken tender and moist.
  • 4. Sauté Aromatics: Reduce the heat to medium. To the same skillet (don’t clean it, those flavorful browned bits are key!), add the minced garlic and chopped sun-dried tomatoes. Sauté for 1-2 minutes, stirring constantly, until the garlic is fragrant and the tomatoes have softened slightly. This step builds the aromatic foundation of your sauce.
  • 5. Whisk the Sauce Base: In a separate small bowl, whisk together the flour, milk of choice, and grated Parmesan cheese until smooth. This ensures there are no lumps in your sauce later on.

  • 6. Combine Ingredients & Thicken Sauce: Pour the whisked milk mixture into the skillet with the garlic and sun-dried tomatoes. Add the fresh spinach. Stir continuously as the sauce begins to heat, allowing it to cook for a couple of seconds until it thickens slightly and the spinach wilts down. The sauce should be creamy enough to coat the back of a spoon.
  • 7. Add Pasta and Chicken: Once the sauce has reached your desired consistency, gently stir in the cooked pasta and the sliced chicken. Toss everything together until the pasta and chicken are evenly coated in the creamy sauce.
  • 8. Serve Immediately: Taste and adjust seasonings if necessary, adding more salt and pepper to your preference. Sprinkle generously with minced fresh parsley for a burst of color and fresh flavor. Serve your delicious Chicken Spinach Pasta hot and enjoy!

Recipe Notes and Expert Tips for Perfection

Achieving the perfect Chicken Spinach Pasta is easy with a few helpful tips and tricks. These notes will help you customize the dish, troubleshoot common issues, and elevate the flavors:

  • Choosing Your Chicken: While boneless, skinless chicken breasts are specified for their lean profile and quick cooking, feel free to substitute with boneless, skinless chicken thighs for a richer, more succulent flavor. Keep in mind that thighs may require a slightly longer cooking time. For an even quicker meal, use pre-cooked rotisserie chicken – simply shred or dice it and add it at the very end when combining the sauce and pasta.
  • Perfectly Cooked Pasta: Always cook your pasta to an al dente consistency. Overcooked pasta can become mushy and won’t hold the sauce as well. For hot pasta dishes like this one, avoid rinsing the pasta after draining. The natural starches on the pasta strands help the creamy sauce cling beautifully, enhancing every bite.
  • Making it Gluten-Free: This recipe is incredibly adaptable for gluten-free diets. Simply swap out traditional pasta for your favorite gluten-free variety (rice, corn, or legume-based pastas work well) and ensure you use a gluten-free all-purpose flour for thickening the sauce.
  • Garlic for Maximum Flavor: For the most vibrant and pungent flavor, always opt for fresh garlic cloves, finely minced. If you’re in a pinch, garlic powder can be used as a substitute (about 1/2 teaspoon of powder for every clove of fresh garlic), but the depth of flavor will be noticeably different.
  • Spinach Flexibility: Fresh spinach is ideal as it wilts quickly and adds a bright, fresh taste. If fresh isn’t available, you can use frozen spinach. Just be sure to thaw it completely and squeeze out as much excess water as possible before adding it to the pan to prevent watering down your sauce.
  • Milk Options: 2% dairy milk provides a balanced creaminess without being too heavy. However, you have full flexibility here. Whole milk will yield a richer sauce, while skim milk will result in a lighter version. For dairy-free needs, unsweetened almond milk, oat milk, or cashew milk are excellent alternatives that contribute to a creamy consistency.
  • The Cheese Factor: For the best flavor and melt, grate your own Parmesan cheese from a block. Pre-shredded cheeses often contain anti-caking agents that can prevent them from melting smoothly and can affect the texture of your sauce.
  • Spice It Up: For a subtle kick, add a pinch of red pepper flakes along with the garlic. A squeeze of fresh lemon juice at the end can also brighten the flavors beautifully.
  • Add More Veggies: This dish is a great base for more vegetables. Sauté sliced mushrooms, bell peppers, or finely chopped zucchini with the garlic for added nutrients and texture.

Frequently Asked Questions About Chicken Spinach Pasta

Can you freeze chicken spinach pasta?

Yes, this chicken pasta freezes beautifully! To freeze, allow the pasta to cool completely. Then, transfer it to a freezer-safe airtight container or heavy-duty freezer bags. It can be stored in the freezer for up to six months. When you’re ready to enjoy it, simply transfer the container to the refrigerator overnight to thaw. Reheat gently in the microwave in 60-90 second intervals, stirring in between, or on the stovetop over low heat, adding a splash of milk or broth if the sauce seems too thick.

How to store leftover chicken pasta?

Leftover chicken pasta is perfect for lunches or another quick dinner. Store any leftovers in an airtight container in the refrigerator for up to four days. This helps maintain its freshness and prevents spoilage.

Should you rinse pasta?

The decision to rinse pasta depends entirely on the dish you are preparing. If you’re making a cold pasta salad, rinsing the pasta is recommended as it helps to cool it down quickly and stops the cooking process, preventing mushiness. However, for hot pasta dishes where the sauce is meant to cling to the pasta, like this chicken spinach pasta, you should not rinse it. The starch left on the pasta after draining helps the sauce adhere much better, resulting in a more cohesive and flavorful dish.

Can I use shrimp instead of chicken?

Absolutely! Shrimp makes a fantastic alternative to chicken in this recipe. Use raw shrimp, peeled and deveined. Season the shrimp similarly to how you would the chicken, perhaps with a little less Italian seasoning if you prefer. Shrimp cooks much faster than chicken, so you’ll only need to cook it for about 2-3 minutes per side, or until it turns opaque and curls into a C-shape. Remove it from the pan before making the sauce, and then add it back in with the pasta at the end.

Can I make this dairy-free?

Yes, you can easily adapt this recipe to be dairy-free. Simply use a dairy-free milk alternative, such as unsweetened almond milk, oat milk, or cashew milk. For the Parmesan cheese, you can either omit it entirely or use a high-quality dairy-free Parmesan alternative, which are widely available in most grocery stores.

What are good side dishes for chicken spinach pasta?

This creamy pasta dish pairs beautifully with a variety of simple sides. A crisp green salad with a light vinaigrette dressing offers a refreshing contrast. Garlic bread or crusty artisan bread is perfect for soaking up any leftover sauce. Steamed or roasted asparagus, broccoli, or green beans would also complement the meal wonderfully, adding more vegetables and a delightful texture.

chicken and spinach pasta in an orange dish

This Chicken Spinach Pasta recipe is incredibly flavorful and made with tender chicken, savory Parmesan, pasta, and aromatic sun-dried tomatoes. Ready in about 30 minutes.

Ingredients

  • 12 ounces pasta, gluten-free or whole wheat
  • 1 pound chicken breast, boneless skinless
  • salt and pepper, to taste
  • 1 teaspoon Italian seasoning
  • 2 tablespoons olive oil
  • 2-3 garlic cloves, minced
  • 1.5 ounces dried tomatoes
  • 2 tablespoons gluten free flour
  • 2 cups milk of choice, dairy or non-dairy
  • 1 cup Parmesan cheese, grated
  • 2 cups spinach, uncooked
  • 2 tablespoons parsley, minced, curly

Instructions

  1. Cook the 12 ounces pasta according to package instructions. Drain and set aside.
  2. Rub the 1 pound chicken breast with salt and pepper, and 1 teaspoon Italian seasoning on both sides.
  3. Heat the 2 tablespoons olive oil in a large skillet over medium heat.
  4. Cook the chicken for about 6-8 minutes per side, or until it develops a golden-brown crust, and it’s fully cooked through on the inside. A meat thermometer inserted in the center should read 165 degrees Fahrenheit. Set aside on a chopping board to rest for a bit, then thinly slice it.
  5. To the same pan, add the 2-3 garlic cloves (minced), 1.5 ounces dried tomatoes, and sauté for 1-2 minutes.
  6. In a small bowl, quickly whisk the 2 tablespoons gluten free flour, 2 cups milk of choice, and 1 cup Parmesan cheese.
  7. Add it to the pan together with the 2 cups spinach. Allow it to bubble for a couple of seconds to thicken up the sauce and wilt the spinach.
  8. Once the sauce coats the back of a spoon, stir in the cooked pasta and sliced chicken.
  9. Sprinkle with chopped 2 tablespoons parsley and freshly ground black pepper and serve immediately!

Notes

  • Serving size: one bowl or 2 cups.
  • Chicken: You can use chicken thighs if you would like. They may take a little longer to cook and the nutritional profile may be a bit different as chicken breasts are leaner. Consider using Rotisserie chicken for convenience.
  • Pasta: Don’t overcook the pasta. Cook until al dente. Do not rinse the pasta for hot dishes. Consider using lentil or chickpea pasta for an even healthier option.
  • Gluten-free: To make this recipe completely gluten-free, substitute with gluten-free pasta and gluten-free flour.
  • Garlic: For the freshest flavor, I like to use fresh garlic cloves, but garlic powder will work if in a pinch.
  • Spinach: I used fresh spinach but you may use frozen (thawed and squeezed of excess water).
  • Milk: 2% milk works great but if you prefer using dairy-free milk go right ahead.
  • Grate your own cheese for the best flavor and melt if possible.
