If you’ve spent any time on social media platforms like TikTok or Instagram, chances are you’ve encountered the viral videos showcasing In-N-Out’s iconic Flying Dutchman burger. Its meteoric rise in popularity is no accident, especially among those adhering to a low-carb diet. The ingenious concept behind this burger involves swapping out conventional bread buns for savory, fried onion patties, creating a truly unique and flavor-packed experience. This simple yet brilliant modification not only makes the burger keto-friendly but also adds an incredible depth of sweet and savory notes that complement the beef and cheese perfectly.
The journey to crafting the perfect Flying Dutchman begins with meticulously preparing the onion “buns.” Thick slices of yellow onion are gently sautéed on a pan or grill until they transform into golden-brown, tender, and slightly caramelized discs. These flavorful foundations are then set aside, patiently awaiting the star of the show: the beef patties. Once the lean beef patties are cooked to perfection, the magic happens. The burger is expertly assembled with a double stack of juicy patties, generously layered with slices of your favorite cheese, and cradled between those wonderful fried onion patties. To complete this culinary masterpiece, we introduce a homemade In-N-Out style sauce. My recipe for this beloved condiment takes a healthier turn, utilizing **Greek yogurt as a creamy, protein-rich substitute for traditional mayonnaise** without sacrificing any of its signature sweet and tangy zest. This healthier rendition of the sauce has been a massive hit in my household, earning a resounding 10/10 from my kids!

Ingredients for the Ultimate Flying Dutchman Burger
Crafting this incredible bunless burger requires a few simple, high-quality ingredients. Each component plays a vital role in achieving that iconic Flying Dutchman flavor. Below is a comprehensive list of what you’ll need. The full detailed recipe and measurements will be listed further down below in the recipe card.
- Lean Ground Beef Burger Patties: The foundation of any great burger. I highly recommend using 93% lean ground beef (or similar) to ensure a juicy patty without excessive grease. While ground chicken or turkey can be substituted for a leaner option, the authentic Flying Dutchman experience traditionally calls for beef.
- Kosher Salt and Freshly Ground Black Pepper: Essential for seasoning the patties, enhancing their natural beefy flavor. Season generously!
- Olive Oil: Used for sautéing the onion rounds, helping them caramelize beautifully. Avocado oil is an excellent alternative due to its high smoke point and neutral flavor.
- Cheese Slices of Choice: The melt-factor is crucial! Classic choices include American, sharp cheddar, or mild provolone. Feel free to use your favorite cheese that melts well and complements beef. You’ll need enough slices for both layers of your burger.
- Large Yellow Onions: These are the star of the show, acting as your bun replacement. It’s imperative to find large onions that can be cut into thick 1/2-inch rounds (about 4 rounds per onion) to provide a sturdy base and top for your burger. Their natural sweetness, once caramelized, is what makes this burger so special.
For the Healthier Homemade In-N-Out Sauce:
This sauce is the secret weapon that truly ties the Flying Dutchman together. Our version is lighter yet equally flavorful.
- Plain Greek Yogurt: This is our healthier base, replacing mayonnaise. It adds a wonderful tang and creamy texture while boosting the protein content. If you prefer, light mayonnaise or even sour cream can be used.
- Sweet Relish or Finely Chopped Pickles: Provides that signature sweet and tangy crunch, a hallmark of the classic In-N-Out sauce.
- Sugar (or Honey/Agave Nectar): A touch of sweetness balances the tanginess of the yogurt and vinegar. Adjust to your preference.
- White Wine Vinegar: Adds a bright, acidic kick that is crucial for the sauce’s flavor profile. Fresh lemon juice can also work in a pinch.
- Ketchup: Non-negotiable for that familiar, rich tomato flavor and vibrant color.
- Yellow Mustard: Contributes a mild, zesty mustard flavor that is essential to the sauce’s complexity. Honey mustard can be used for a slightly sweeter variation.

How to Make the Perfect Flying Dutchman Burger: Step-by-Step
Making your own Flying Dutchman Burger at home is a straightforward process that yields incredibly delicious results. Follow these steps for a perfectly cooked, low-carb burger experience:
Step 1: Prepare the In-N-Out Style Sauce
Begin by whisking together all the sauce ingredients in a small bowl: Greek yogurt, relish (or chopped pickles), sugar (or honey/agave), white wine vinegar, ketchup, and yellow mustard. Stir until thoroughly combined and smooth. Taste and adjust seasonings if necessary. Once mixed, cover the bowl and refrigerate the sauce. This allows the flavors to meld beautifully and keeps it cool until you’re ready to serve.
Step 2: Season and Rest the Burger Patties
Take your ground beef burger patties and generously sprinkle both sides with kosher salt and freshly ground black pepper. Once seasoned, set them aside at room temperature for about 10-15 minutes. This small step helps the patties cook more evenly and develop a better sear.

Step 3: Caramelize the Onion “Buns”
Preheat a large, heavy-bottomed skillet (cast iron works wonderfully) over medium heat. Drizzle 1 tablespoon of olive oil into the skillet. Once the oil is shimmering, carefully place the thick yellow onion rounds into the pan. Cook for approximately 2-3 minutes per side, or until they turn golden brown, tender, and slightly caramelized. You want them soft enough to act as a bun but firm enough to hold their shape.
Once cooked, immediately place two of the cheese slices on top of two of the caramelized onion rounds. Transfer these to a plate and cover loosely with foil to keep them warm and encourage the cheese to melt into a gooey layer. These will form the top “buns” of your burgers.

Step 4: Cook the Beef Patties
Using the same preheated skillet (no need to clean it, the onion flavor will add to the patties!), add your seasoned beef patties. Cook for about 3 minutes per side, or until they develop a beautiful golden-brown crust. For medium doneness, aim for an internal temperature of 145°F (63°C). Flip the patties, and immediately place the remaining two cheese slices on two of the cooked patties. Continue to cook for just 1 more minute, or until the cheese is perfectly melted and slightly bubbly.

Step 5: Assemble Your Flying Dutchman Burgers
This is where it all comes together! Quickly assemble your burgers on a clean plate while everything is still warm. Start with one of the plain grilled onion rounds (without cheese) as your base. On top of this, stack one beef patty (the one without cheese). Next, place the second beef patty (the one with melted cheese). Finally, crown your burger with the remaining onion round (the one with melted cheese). The melted cheese will help hold the top onion in place.
Step 6: Serve and Enjoy!
Once assembled, serve your Flying Dutchman Burger immediately with a generous drizzle of your homemade Greek yogurt sauce. Enjoy this warm, savory, and incredibly satisfying low-carb meal!
Pro Tips for the Best Flying Dutchman Burger
To ensure your homemade Flying Dutchman Burger is absolutely perfect every time, consider these expert tips:
- Choose Large, Firm Onions: The success of your onion “buns” hinges on the size and quality of your onions. Opt for the largest yellow onions you can find, as they will provide a more substantial and easier-to-handle bun replacement. Cut them into 1/2-inch thick rounds to maintain their structural integrity during cooking and assembly.
- Don’t Rush the Caramelization: Patience is key when sautéing the onions. Cooking them over medium heat allows them to slowly caramelize, developing a deep sweetness and tender texture without burning. This process typically takes a few minutes per side until they are golden brown.
- Room Temperature Patties: Allowing your burger patties to come to room temperature for 10-15 minutes before cooking promotes even cooking and a better sear. This prevents the outside from burning before the inside is properly cooked.
- Season Generously: Don’t be shy with the salt and pepper on your beef patties. Proper seasoning is crucial for maximizing flavor, especially in a burger with minimal additional toppings.
- Hot Skillet for Searing: Ensure your skillet is adequately preheated over medium heat before adding the onions and then the patties. A hot pan creates a beautiful crust on the beef and helps caramelize the onions quickly, locking in juices and flavor.
- Work Quickly During Assembly: The Flying Dutchman can be a bit messy to handle due to its bunless nature. Assemble your burgers promptly after cooking while the ingredients are still hot and the cheese is soft and pliable. This helps everything adhere better.
- Customize Your Cheese: While American cheese is classic for its meltability, feel free to experiment with other cheeses like sharp cheddar, Monterey Jack, or even pepper jack for a kick.
- Prepare Sauce Ahead: Making the homemade In-N-Out sauce in advance allows the flavors to deepen and meld, resulting in a more delicious and cohesive dressing.

- Baked Smashed Sweet Potatoes: Tender on the inside and crispy on the outside, these offer a comforting and wholesome side.

Frequently Asked Questions About the Flying Dutchman Burger
Here are answers to some common questions about this unique and delicious bunless burger:
The Flying Dutchman Burger is a legendary item from In-N-Out Burger’s secret menu, originally conceived by its founder, Harry Snyder. In its purest, original form, it consists simply of two beef patties with two slices of cheese melted in between – no bun, no lettuce, no sauce, no extra toppings. Over time, as people began to discover and share this unique creation on social media, many home cooks and enthusiasts started innovating, popularly using large, griddled onion slices as a creative, low-carb substitute for traditional buns, which is the version we are recreating here.
In its classic In-N-Out interpretation, a Flying Dutchman is minimalistic: just two perfectly cooked beef burger patties and two slices of American cheese melted between them. However, when people recreate it at home and on social media, the most popular variation (and the one we’re featuring) includes using caramelized or grilled onion rounds as the “buns” and often serving it with a copycat “special sauce,” typically a Thousand Island-style dressing made with mayonnaise, ketchup, mustard, and relish. Our recipe elevates this with a healthier Greek yogurt-based sauce.
The original Flying Dutchman burger always features two beef patties. This double-patty construction is fundamental to its identity, providing a substantial and satisfying meat-and-cheese experience. While some might be tempted to use three patties for an even heartier meal, the standard and most recognized version strictly adheres to two patties, perfectly complementing the two slices of cheese.
Absolutely! The Flying Dutchman, especially when made with onion “buns,” is an excellent choice for a keto or low-carb diet. By eliminating the carb-heavy bread bun, you significantly reduce your carbohydrate intake. Our recipe enhances this by using a Greek yogurt-based sauce, further reducing sugars and fats commonly found in traditional mayo-based dressings, making it even more aligned with a healthy low-carb lifestyle.
While the burger is best enjoyed fresh off the skillet, you can certainly do some prep work in advance. The homemade sauce can be made 2-3 days ahead and stored in the refrigerator. You can also form your burger patties and slice your onions earlier in the day. However, cooking the patties and onions should be done right before serving to ensure the best texture and flavor.

Storing and Reheating Your Flying Dutchman Burger
If you happen to have any leftovers of this delicious bunless burger, here’s how to properly store and reheat them to maintain their flavor and texture:
- Storing: Allow any leftover burgers to cool completely. Once cool, carefully place them in an airtight container. They can be stored in the refrigerator for up to 3 days. For longer storage, you may also freeze individual components (patties and onions separately, if possible) for up to one month. Wrap them tightly in plastic wrap and then place them in a freezer-safe bag or container.
- Reheating: For refrigerated leftovers, you have a couple of options. You can gently reheat the burger in the microwave for 1-2 minutes, checking at 30-second intervals until warmed through. Be careful not to overcook, as this can make the patties tough. Alternatively, for a crispier result, you can wrap the burger loosely in foil and place it in a preheated oven at 350°F (175°C) for about 5-7 minutes, or until heated to your desired temperature. If reheating from frozen, it’s best to thaw in the refrigerator first, then reheat using one of the methods above.

- 1 tablespoon sugar, or honey or agave

- 1 teaspoon yellow mustard
Instructions
- Sprinkle your 1 pound 93% lean ground beef burger patties with Kosher salt and pepper on both sides and set aside to reach room temp.

- Add 2 of the 4 cheese slices of choice on 2 onion rounds and set aside on a plate. Cover to keep warm and help the cheese melt.
- To the same preheated skillet, add the patties and cook until they start to get golden brown for about 3 minutes per side, then flip them and add the remaining cheese slices to 2 of your cooked patties. Continue to cook for 1 more minute, or just until the cheese starts to melt.
- Quickly assemble the burgers on a clean plate; Starting with the grilled onion without cheese as your base, stack the rest as follows: patty without cheese, the second patty with cheese, then finish off with the onion with cheese.
- Make the sauce. In a small bowl, whisk all the sauce ingredients (1/3 cup Greek yogurt, 3 tablespoons relish, 1 tablespoon sugar, 1 tablespoon white wine vinegar, 3 tablespoons ketchup, and 1 teaspoon yellow mustard), then refrigerate until ready to use.
- Serve with a drizzle of the yogurt sauce and enjoy while warm.
Notes
- Do use large onions for the best “bun” effect.
- You can use lean ground chicken or ground turkey as an alternative to beef.
- Feel free to use any cheese of your choice, such as American, cheddar, or provolone, depending on your preference.
- Work with care during assembly. This burger is a bit messy and can be hard to handle due to its bunless structure. It’s expected, so just proceed slowly when putting it together.
