Essential Ingredients for Your Chicken Puttanesca

Crafting this remarkable Chicken Puttanesca begins with a selection of fresh, high-quality ingredients. While the full, precise measurements are detailed in the recipe card below, here’s an overview of what you’ll need and why each component is essential for that perfect flavor balance:

ingredients to make chicken puttanesca.
  • Boneless Chicken Breasts: We recommend cutting these in half lengthwise to ensure quicker and more even cooking. This also creates more surface area for that beautiful golden-brown sear. If you prefer, boneless and skinless chicken thighs can be used for a slightly richer, more succulent result.
  • Extra Virgin Olive Oil: The foundation of many Mediterranean dishes, a good quality olive oil is essential for sautéing the chicken and building the sauce’s flavor base. Avocado oil is also a suitable alternative for its high smoke point and neutral taste.
  • Kosher Salt and Ground Black Pepper: These fundamental seasonings are crucial for enhancing the natural flavors of both the chicken and the vibrant puttanesca sauce. Always season to taste, adjusting as needed during cooking.
  • Dried Oregano: A cornerstone herb in Italian cuisine, dried oregano infuses the dish with its distinctive earthy and slightly peppery notes, contributing to the sauce’s authentic aroma and depth.
  • Anchovy Fillets (coarsely chopped): Don’t be deterred by anchovies! While optional, they are the secret ingredient that provides an incredible depth of savory umami without making the dish taste “fishy.” They melt seamlessly into the sauce, adding a complex brininess that is irreplaceable.
  • Fresh Garlic Cloves (finely chopped): Fresh garlic is paramount for its pungent, aromatic qualities. It’s truly worth the effort to use fresh cloves over pre-minced for superior flavor.
  • Canned Peeled Tomatoes with Juices (28 ounces): Whole peeled tomatoes, crushed by hand, offer a rustic texture and rich tomato flavor. You can also opt for crushed tomatoes or a high-quality tomato sauce if preferred, but ensure they are unsweetened to control the flavor profile.
  • Pitted Kalamata Olives (coarsely chopped): These dark, fruity, and slightly briny Greek olives are characteristic of puttanesca. They add a wonderful salty tang and textural contrast. Green olives can be substituted if Kalamata are unavailable.
  • Capers: Small, briny, and intensely flavorful, capers add a distinctive salty and slightly sour punch to the sauce, cutting through its richness. While some prefer to skip them, they are a hallmark of authentic puttanesca.
  • Fresh Parsley (chopped for garnish): A sprinkle of fresh parsley at the end adds a bright, herbaceous finish and a pop of vibrant color. It’s a wonderful garnish but can be omitted if you don’t have it on hand.
  • Optional: Crusty Bread: Perfect for soaking up every last drop of the delicious sauce, warm crusty bread is a highly recommended accompaniment.

Crafting Your Perfect Chicken Puttanesca: Step-by-Step Guide

Creating this delicious chicken puttanesca is a straightforward process, designed to deliver maximum flavor with minimal fuss. Follow these simple steps for a dish that tastes like it came from a gourmet Italian kitchen:

  • Step 1: Prepare the Chicken for Searing. Begin by patting your boneless chicken breasts dry with paper towels. This crucial step helps achieve a beautiful golden-brown sear. Season both sides generously with kosher salt, freshly ground black pepper, and 1 teaspoon of dried oregano. Make sure the seasoning is evenly distributed for maximum flavor.
  • Step 2: Sear the Chicken to Perfection. Heat 1 tablespoon of olive oil in a large cast-iron skillet (or any heavy-bottomed pan) over medium heat until shimmering. Carefully add the seasoned chicken breasts to the hot skillet. Cook for approximately 10-12 minutes, flipping halfway through, until each side is beautifully golden-brown and the chicken is cooked through to an internal temperature of 165°F (74°C). If your pan is not large enough, cook the chicken in batches to avoid overcrowding, which can steam the chicken instead of searing it. Once cooked, transfer the chicken to a clean plate and set aside.

  • Step 3: Build the Aromatic Puttanesca Sauce. Using the same skillet (no need to clean it, those browned bits add flavor!), add the remaining 1 tablespoon of olive oil. Reduce the heat slightly to medium-low. Add the finely chopped fresh garlic and the coarsely chopped anchovy fillets (if using). Sauté for about 1 minute, stirring constantly, until the garlic is fragrant and the anchovies have mostly dissolved into the oil. This quick sauté is key to unlocking their savory essence.
  • Step 4: Simmer and Thicken the Sauce. Pour in the 28 ounces of peeled tomatoes with their juices, along with the remaining dried oregano. Use the back of a wooden spoon or a potato masher to gently crush the whole tomatoes into smaller, rustic pieces directly in the pan. Stir in the pitted Kalamata olives and capers. Bring the sauce to a gentle simmer, then partially cover the skillet. Allow it to cook over low heat for 8-10 minutes, stirring occasionally, until the sauce has thickened and the flavors have melded beautifully.

  • Step 5: Combine and Heat. Taste the simmering puttanesca sauce and adjust seasonings as needed, adding more salt or pepper if desired. Return the seared chicken breasts to the pan, nestling them into the rich sauce. Spoon the sauce generously over the chicken to ensure it’s fully coated. Let it gently simmer for another few minutes, just until the chicken is thoroughly heated through and infused with the sauce’s incredible flavors.
  • Step 6: Garnish and Serve. Remove the skillet from the heat. Garnish generously with freshly chopped parsley for a burst of freshness and color. Serve immediately, ideally with warm crusty bread to sop up every last drop of that magnificent puttanesca sauce. Enjoy this delightful dish with your family and friends!

Chef’s Notes & Pro Tips for Perfect Puttanesca

Achieving the best possible Chicken Puttanesca is easy with a few insider tips. These suggestions will help you elevate your dish and ensure a truly memorable meal:

  • Chicken or Seafood Variations: While chicken breast is fantastic in this recipe, feel free to experiment. Boneless, skinless chicken thighs offer a slightly richer flavor and stay incredibly moist. If you’re looking to incorporate seafood, flaky white fish like cod or robust salmon fillets make excellent substitutes for chicken, absorbing the vibrant flavors of the puttanesca sauce beautifully. Simply pan-sear or bake the fish separately and gently fold it into the sauce at the very end.
  • Homemade vs. Canned Tomatoes: For an extra layer of freshness and control over the ingredients, consider using your own homemade peeled tomatoes if you have them. However, high-quality canned peeled tomatoes are perfectly acceptable and provide a convenient shortcut without sacrificing flavor. Look for San Marzano tomatoes for a premium option.
  • The Magic of Anchovies: Do not underestimate the power of anchovy fillets! Even if you’re not typically a fan of anchovies, trust us on this one. They don’t make the sauce taste “fishy” at all. Instead, they melt away into the hot oil, imparting a deep, savory, umami richness that forms the backbone of the puttanesca’s complex flavor. They are truly an optional ingredient, but their contribution is significant.
  • Meal Prep Made Easy: To make weeknight dinners even smoother, prepare the puttanesca sauce ahead of time. You can make it a day or two in advance and store it in an airtight container in the refrigerator. When ready to serve, simply reheat the sauce, sear your chicken, and combine. This cuts down on active cooking time dramatically.
  • Pan Choice Matters: A cast-iron skillet is ideal for this recipe because it retains and distributes heat evenly, allowing for a fantastic sear on the chicken and consistent simmering of the sauce. If you don’t have one, a heavy-bottomed stainless steel pan will also work well.
  • Adjusting Spiciness: For those who enjoy a little heat, a pinch of red pepper flakes can be added to the sauce along with the garlic and anchovies. Start with a quarter teaspoon and add more to taste.

Storing and Reheating Your Delicious Leftovers

One of the many benefits of this Chicken Puttanesca recipe is how wonderfully it stores, making it an excellent candidate for meal prep or enjoying flavorful leftovers throughout the week.

  • Storing: After allowing the dish to cool completely, transfer any leftover chicken puttanesca to an airtight container. It will keep beautifully in the refrigerator for up to 3-4 days. For longer storage, you can freeze it for up to 2 months. Ensure the container is freezer-safe to prevent freezer burn and maintain quality. Thaw overnight in the refrigerator before reheating.
  • Reheating: For best results, reheat individual portions in the microwave using 30-second increments, stirring between each interval, until thoroughly warmed through. Alternatively, you can gently reheat it in a skillet on the stovetop over medium-low heat, adding a splash of chicken broth or water if the sauce seems too thick, until heated to your desired temperature.

Perfect Pairings: What to Serve with Chicken Puttanesca

Chicken Puttanesca is a versatile dish that pairs beautifully with a variety of sides, whether you’re looking for a hearty meal, a light accompaniment, or a low-carb option. Here are some fantastic suggestions to complement its bold flavors:

  • Roasted or Grilled Vegetables: Enhance your meal with a healthy and flavorful side of vegetables. Try our Oven-Roasted Veggies for a simple yet delicious option, or our Garlic-Roasted Vegetables for an extra boost of savory flavor.
  • Crusty Bread and Rolls: Essential for soaking up every last drop of the rich puttanesca sauce! Serve with warm crusty bread or try our Homemade Dinner Rolls for a truly comforting experience.
  • Pasta Favorites: For a classic combination, serve your chicken puttanesca over a bed of spaghetti, linguine, or penne. Our Garlic Mushroom Spaghetti is a particularly good match.
  • Low-Carb Alternatives: If you’re mindful of carbohydrates, Zucchini Noodles or spiralized veggie alternatives are an excellent choice, providing a light base that beautifully soaks up the sauce.
  • Grains: A simple side of white rice, brown rice, fluffy Couscous, or protein-rich quinoa can provide a satisfying contrast to the robust sauce.
  • Cauliflower Rice: Another fantastic low-carb option, Cilantro Lime Cauliflower Rice adds a fresh twist and absorbs the sauce beautifully.

Frequently Asked Questions About Chicken Puttanesca

What does puttanesca taste like?

Puttanesca sauce boasts a bold, complex, and deeply satisfying flavor profile. It’s often described as savory, briny, slightly sweet from the tomatoes, and can have a subtle kick if chili flakes are added. The combination of tomatoes, olives, capers, and the umami depth from anchovies creates a unique taste experience that is robust and incredibly aromatic. It’s a symphony of Mediterranean flavors that tantalizes the taste buds.

Can I use sardines instead of anchovies?

It is generally not recommended to substitute sardines for anchovies in a puttanesca sauce. While both are small, oily fish, their flavor profiles and how they behave in cooking are quite different. Anchovies are cured in salt, which mellows their “fishy” taste and enhances their umami, allowing them to melt almost completely into the sauce and impart a rich, savory depth without a strong fish flavor. Sardines, on the other hand, retain their distinct fishy taste and texture, and will not dissolve into the sauce, resulting in a different and potentially overpowering flavor in your puttanesca.

Does puttanesca taste fishy?

Despite the inclusion of anchovies, authentic puttanesca sauce does not taste overtly fishy. This is a common misconception! Anchovies undergo a salt-curing process for several months, which transforms their flavor, developing a concentrated salty, savory, and briny essence rather than a fresh “fishy” taste. When cooked in the sauce, they completely dissolve, imparting an incredible depth of umami that enriches the overall flavor without leaving any fishy residue. Their role is to amplify the savory notes, making the sauce more robust and irresistible.

Is Chicken Puttanesca spicy?

Traditionally, puttanesca sauce often includes a pinch of red pepper flakes, giving it a subtle to moderate spicy kick. However, the level of spice is entirely customizable. You can omit the chili flakes for a milder version or increase them for a bolder, spicier dish, depending on your preference. The recipe as written usually offers a balanced flavor with just a hint of warmth.

Equipment

  • Cast Iron Skillet
  • Chef’s knife

Ingredients

  • 2 pounds boneless chicken breasts, cut in half lengthways to cook faster
  • 2 tablespoons olive oil, divided
  • Kosher salt and ground black pepper, to taste
  • 1 tablespoon dried oregano, plus 1 tsp
  • 4 anchovy fillets, coarsely chopped (optional)
  • 3-4 cloves garlic, finely chopped
  • 28 ounces peeled tomatoes with juices, one can
  • 1 cup pitted Kalamata olives, coarsely chopped
  • 1/4 cup capers
  • Fresh parsley, chopped for garnish

OPTIONAL:

  • Crusty bread, to serve

Instructions

  1. Rub the 2 pounds boneless chicken breasts with Kosher salt and ground black pepper, and 1 tsp of the 1 tablespoon dried oregano on both sides.
  2. Heat 1 tbsp of the 2 tablespoons olive oil in a large skillet over medium heat.
  3. Add chicken and cook, until cooked through and golden-brown on both sides, about 10-12 minutes. Set aside on a plate. You might have to cook the chicken in batches to avoid overcrowding the pan, so divide the oil if so.
  4. Add the remaining 1 tbsp of oil to the hot skillet, and sauté the 3-4 cloves garlic (minced) and 4 anchovy fillets (chopped) for 1 minute.
  5. Add in the 28 ounces peeled tomatoes with juices and the rest of the oregano. Use the back of a wooden spoon to crush the tomatoes into small pieces.
  6. Stir in the 1/4 cup capers, and 1 cup pitted Kalamata olives; Simmer over low heat, partially covered, for 8-10 minutes until the sauce thickens.
  7. Taste the sauce and season with salt and pepper, if needed.
  8. Return the chicken to the pan and spoon over the sauce. Allow it to cook for a bit more into the sauce, until hot.
  9. Garnish with Fresh parsley (chopped) and enjoy. Serve with warm Crusty bread.

Notes

  • Chicken: If you want to use seafood, any fish would work. A great substitute would be cod or salmon.
  • You may make your own homemade peeled tomatoes instead of using canned.
  • Anchovies can be optional but will add a great savory taste.
