There are countless reasons why this Instant Pot Beef Stroganoff is destined to become a staple in your home. Here’s what makes it truly special:
- Unbeatable Flavor: The combination of tender beef, savory mushrooms, and a rich, tangy sauce creates a depth of flavor that’s both sophisticated and deeply satisfying. Each bite is a harmonious blend of classic stroganoff tastes.
- Effortless Cooking: The Instant Pot transforms what can sometimes be a lengthy, stovetop process into a streamlined, hands-off experience. With the magic of pressure cooking, you get fork-tender beef in a fraction of the time, freeing you up to do other things.
- Speedy Weeknight Meal: From start to finish, this recipe comes together in under an hour. It’s perfect for those busy evenings when you need a hearty, homemade meal without spending hours in the kitchen.
- Family-Friendly: A beloved classic, beef stroganoff is a dish that appeals to almost everyone. Even picky eaters will happily devour the creamy noodles and savory beef, making dinner time a breeze.
- Versatile and Adaptable: Easily customize this recipe to suit your preferences or what you have on hand. Swap beef for other proteins, add extra vegetables, or even make it vegetarian. It’s a flexible foundation for many delicious variations.
- One-Pot Wonder (mostly): While the noodles are cooked separately for perfect texture, the main beef and sauce component is cooked entirely in the Instant Pot, minimizing cleanup and simplifying the cooking process significantly.
Before You Get Started: Essential Tips for Success
To ensure your Instant Pot Beef Stroganoff turns out perfectly every time, keep these helpful tips in mind:
- Uniform Beef Cubes: Always cut your stew meat into evenly sized, bite-sized cubes. This ensures that every piece cooks at the same rate, resulting in uniformly tender beef that melts in your mouth. Irregular pieces can lead to some tough spots.
- Don’t Skip Sautéing: Sautéing the mushrooms and onions isn’t just about softening them; it’s crucial for building the foundational flavor of your entire dish. This step creates a rich, caramelized base that adds depth and complexity to the stroganoff sauce. Allow them to brown slightly for maximum flavor.
- Control Saltiness with Broth: Opt for low-sodium beef broth. This gives you greater control over the overall saltiness of the dish, allowing you to adjust seasonings to your exact preference without risking an overly salty meal. You can always add more salt, but you can’t easily remove it.
- Prepare Your Slurry in Advance: Have your thickening agent (cornstarch or flour mixed with water or broth) ready and whisked smooth *before* you release the pressure from the Instant Pot. Once the lid is off and the sauce is hot, it will thicken quickly, and you want to avoid any lumps.
- Deglaze Properly: After sautéing the beef, ensure you scrape any browned bits from the bottom of the Instant Pot insert before adding liquids and pressure cooking. This not only adds more flavor but also prevents the “burn” error message.
Ingredient Notes and Smart Substitutions
Below is a comprehensive list of the ingredients you’ll need to create this delectable Instant Pot Beef Stroganoff, along with notes on why they work and potential substitutions. Full measurements are detailed further down in the recipe card.

- Olive Oil: Essential for sautéing the vegetables and beef, helping to build a rich flavor base. Avocado oil is an excellent alternative due to its high smoke point and neutral flavor.
- Onion: White cooking onions are my preferred choice for their balanced flavor that mellows beautifully when cooked. Sweet onions can also be used for a slightly milder, sweeter undertone.
- Mushrooms: Brown button mushrooms (cremini) offer a deeper, earthier flavor than white button mushrooms. Other great choices include shiitake for an umami boost, or quartered portobello mushrooms for a meatier texture. Feel free to use a mix!
- Meat: While stew meat (often pre-cut chuck) is convenient and becomes incredibly tender under pressure, several other cuts work wonderfully. Beef tenderloin offers a luxurious texture, flank steak or sirloin can be sliced against the grain for tender results, and ribeye adds rich marbling. For a leaner option, ground beef or turkey can be used (see FAQs).
- Seasonings: A robust blend of Kosher salt and pepper, dried oregano, smoked paprika, garlic powder, and onion powder forms the core flavor profile. Adjust to taste, and don’t be shy with the pepper!
- Worcestershire Sauce: This classic ingredient adds a crucial layer of tangy, umami depth that is quintessential to stroganoff. If you need a substitute, a combination of soy sauce, apple cider vinegar (or red wine vinegar), and a tiny pinch of sugar can mimic its flavor surprisingly well. Note: if using soy sauce as a substitute here, you won’t need to add additional soy sauce later.
- Soy Sauce: A small amount of soy sauce enhances the savory umami notes of the beef and mushrooms, contributing to the rich depth of the sauce. Use regular or low-sodium based on your preference.
- Broth: Beef broth or stock is fundamental for creating a flavorful sauce and ensuring the beef cooks to perfection. Vegetable broth can be used as a vegetarian alternative or if you simply have it on hand, though it will alter the overall depth of flavor slightly.
- Flour (or Cornstarch): Used as a thickening agent to achieve that signature creamy stroganoff consistency. Gluten-free flour works perfectly, or you can swap it for cornstarch (as part of a slurry) for a gluten-free option.
- Noodles: Classic wide egg noodles are traditional for stroganoff, soaking up the sauce beautifully. However, feel free to experiment with other pasta shapes like penne, rotini, or even gluten-free pasta varieties.
- OPTIONAL: Freshly Chopped Parsley: A sprinkle of fresh parsley at the end adds a vibrant pop of color and a fresh, herbaceous note that brightens the entire dish. Don’t underestimate its finishing touch!
Frequently Asked Questions
Absolutely! To use ground beef, begin by browning it directly in the Instant Pot using the Sauté function. Once browned, drain any excess fat, then follow the rest of the recipe instructions as written. Ground beef will cook faster, but the pressure cooking time remains largely the same to allow the flavors to meld.
If your beef turns out tough, it almost always indicates that the cut of meat requires a longer cooking time under pressure. Tougher cuts like stew meat (chuck roast) benefit significantly from extended pressure cooking, which breaks down connective tissues and makes them incredibly tender. Ensure you’re using the correct pressure cooking time for the specific cut of beef. If it’s still tough, you can always reseal the pot and cook for another 5-10 minutes.
For the absolute best results and ideal texture, yes, it is highly recommended to cook the egg noodles separately. Cooking them directly in the Instant Pot with the beef can lead to them becoming mushy or overcooked, absorbing too much of the delicious sauce and altering the final consistency of the dish. Cooking them separately ensures they are perfectly al dente and ready to be tossed into the rich, creamy sauce at the very end.
While traditional stroganoff often includes sour cream or heavy cream, this Instant Pot version focuses on a rich broth-based sauce. For a completely dairy-free option, ensure your broth is dairy-free. If you desire a “creamy” finish, you can stir in a splash of full-fat coconut milk (for a subtle sweetness) or a dairy-free plain unsweetened yogurt substitute (like cashew or almond-based) at the very end, after pressure cooking and thickening, just before serving.
If your sauce is too thin, you can whisk together a bit more flour or cornstarch with water to create an additional slurry and stir it into the simmering sauce on Sauté mode. Cook until it reaches your desired consistency. If the sauce is too thick, simply stir in a splash more beef broth (or water) until it thins out to your liking.
How to Make Instant Pot Beef Stroganoff: Step-by-Step Guide
Follow these detailed steps to achieve perfect, mouth-watering Instant Pot Beef Stroganoff every single time:

1️⃣ Sauté Aromatics and Mushrooms
Begin by pressing the “Sauté” button on your Instant Pot. Once hot, drizzle in the olive oil. Add the diced onion and quartered mushrooms to the pot. Stir them well to coat with oil and spread them into an even layer.
Chef’s Tip: This initial sauté step is paramount for developing a deep, rich flavor base. Allow the vegetables to cook until they start to brown and release their moisture, building layers of savory goodness.
2️⃣ Cook Until Softened and Fragrant
Continue to stir the onions and mushrooms occasionally, allowing them to cook for about 5-7 minutes. You’ll notice the mushrooms shrinking significantly and releasing their juices, becoming beautifully softened and fragrant. This indicates they are ready for the next step.
Visual Cue: The mushrooms will take on a golden-brown hue, and the onions will become translucent, filling your kitchen with a delightful aroma.

3️⃣ Season the Beef and Sear
While the vegetables are sautéing, prepare your beef. In a medium-sized bowl, toss the cubed stew meat generously with Kosher salt and pepper, dried oregano, smoked paprika, garlic powder, and onion powder until every piece is well coated. Once the mushrooms are ready, spread the seasoned beef into the Instant Pot in an even layer over the cooked vegetables.
Pro-Tip: Arranging the beef in an even layer helps it to sear properly, locking in juices and adding another layer of deep, savory flavor before pressure cooking. A slight browning here is a flavor game-changer.
4️⃣ Add Sauces, Broth, and Pressure Cook
Pour in the Worcestershire sauce and soy sauce, then add the beef broth. Give everything a good stir to combine all the ingredients and ensure no bits are stuck to the bottom of the pot (this prevents a “burn” error). Secure the lid on your Instant Pot, set the valve to the “Sealing” position, and select the “Manual” or “Pressure Cook” function. Set the cooking time for 18 minutes on High Pressure. While the beef is cooking, prepare your egg noodles according to package directions in a separate pot of salted boiling water. Drain them once cooked and set aside.
Remember: Cooking the noodles separately is key to achieving that perfect tender bite without them becoming waterlogged or mushy in the sauce.

5️⃣ Quick Release and Thicken the Sauce
Once the 18-minute pressure cooking cycle is complete, carefully perform a Quick Release by turning the steam release valve to the “Venting” position. Stand clear of the steam. While the pressure is releasing, whisk together your gluten-free flour (or cornstarch) with 3-4 tablespoons of water in a small bowl until you have a smooth, lump-free slurry. Once the float valve drops, open the Instant Pot lid. Pour the prepared slurry into the hot beef mixture and stir it in thoroughly.
Expert Tip: Whisking the slurry well before adding is crucial; this ensures your stroganoff sauce will be wonderfully smooth and creamy, not lumpy.
6️⃣ Finish, Stir, and Serve
Press the “Sauté” button again on your Instant Pot and set a timer for 3 minutes. Allow the mixture to gently bubble and simmer, stirring occasionally. As it simmers, the sauce will thicken into its signature rich, creamy consistency. Once thickened to your liking, turn off the Sauté function. Stir in the separately cooked egg noodles, tossing them gently to coat completely in the luscious stroganoff sauce. Garnish with freshly chopped parsley, if desired, for a final touch of freshness and color.
Serving Suggestion: Serve immediately while hot, ensuring every noodle is coated in the irresistible sauce.

Variations & Customization Tips
This Instant Pot Beef Stroganoff recipe is wonderfully adaptable, allowing you to tailor it to your taste and dietary needs. Here are some ideas for variations and tips:
- Protein Swap:
- Ground Beef or Turkey: As mentioned, brown it first on Sauté, then proceed. It creates a slightly different texture but is equally delicious and often quicker.
- Chicken Stroganoff: Cut chicken breast or thighs into bite-sized pieces and follow the same method, reducing pressure cooking time to 8-10 minutes for chicken.
- Chuck Roast: For an even richer, melt-in-your-mouth experience, use a chuck roast cut into larger chunks and increase pressure cooking time to 30-35 minutes.
- Make it Vegetarian: Omit the beef entirely and double up on the mushrooms for a hearty mushroom stroganoff. You can also add other robust vegetables like sliced carrots or celery during the sauté step. For extra protein, consider adding cooked lentils, chickpeas, or pan-fried tofu cubes at the end. Use vegetable broth instead of beef broth.
- Noodle Alternatives: While egg noodles are classic, feel free to switch it up. Penne, rotini, cavatappi, or even macaroni will work well. For a gluten-free option, use your favorite gluten-free pasta, cooked separately. You can also serve it over mashed potatoes, rice, or cauliflower rice for a different texture.
- Boost with Extra Veggies: Enhance the nutritional value by stirring in fresh spinach, frozen peas, or blanched broccoli florets during the last few minutes of sautéing or after the sauce has thickened. This adds color, texture, and vitamins.
- Creamier Texture: For an even richer, creamier sauce, stir in a quarter to half a cup of sour cream or plain Greek yogurt (at room temperature to prevent curdling) at the very end, after the sauce has thickened and just before serving.
- Spice it Up: Add a pinch of red pepper flakes or a dash of hot sauce if you enjoy a little heat in your stroganoff.
Storage & Make-Ahead Tips
Beef Stroganoff is a fantastic meal for meal prepping and enjoying as leftovers. Here’s how to store and reheat it:
- Fridge: Store any leftover Instant Pot Beef Stroganoff in an airtight container in the refrigerator for up to 4 days. The flavors often deepen overnight, making it even more delicious the next day.
- Freezer: For longer storage, freeze portions of the stroganoff (without the noodles, if possible, for best texture) in freezer-safe containers for up to 3 months. When ready to enjoy, thaw overnight in the fridge before reheating. If freezing with noodles, they might become slightly softer upon thawing.
- Reheating: Gently warm leftovers in the microwave or on the stovetop over medium-low heat until heated through. If the sauce has thickened too much during storage, add a splash of beef broth, water, or even milk (if not dairy-free) to loosen it back to your desired consistency.
What to Serve with Instant Pot Beef Stroganoff: Perfect Pairings
Beef Stroganoff is already a complete and satisfying meal with its beef and noodles, but pairing it with a fresh side can elevate the experience. Here are some of my favorite accompaniments that complement its rich flavors beautifully:
- Broccoli Cauliflower Salad: A light, crunchy, and tangy salad that offers a refreshing contrast to the creamy stroganoff.
- Garlic Butter Mashed Cauliflower: A healthier, low-carb alternative to traditional mashed potatoes, providing a smooth and garlicky base for the stroganoff.
- Garlic Roasted Broccolini: Simple, vibrant, and packed with flavor, roasted broccolini adds a lovely green vegetable crunch.
- Air Fryer Green Beans: Quick, crispy, and perfectly seasoned green beans offer a fantastic textural contrast.
- Homemade Dinner Rolls: Soft, warm rolls are perfect for soaking up every last drop of that incredible sauce.
- Cheesy Garlic Bread: A classic comfort food pairing, the cheesy, garlicky bread is irresistible alongside the rich stroganoff.

A quick and hearty one-pot meal with tender beef, mushrooms, and a creamy sauce tossed with egg noodles.
Ingredients
- 2 tablespoons olive oil, or avocado oil
- 1 medium white onion, diced
- 1½ pounds brown mushrooms, quartered
- 2 pounds stew meat, cut into bite sized pieces
- Kosher salt and pepper, to taste
- 2 teaspoons dried oregano
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1½ tablespoons Worcestershire sauce
- 1½ tablespoons soy sauce
- 2½ cups beef broth or stock
- 2 tablespoons Gluten-free flour, or cornstarch
- 10 ounces egg noodles
OPTIONAL:
- Freshly chopped parsley
Instructions
-
Press the SAUTE button on your pressure cooker. Drizzle with the 2 tablespoons olive oil. Add in the 1 medium white onion (diced) and 1½ pounds brown mushrooms, and saute them together.
-
Stir them occasionally and cook for 5-7 minutes, until softened and fragrant.
-
While the mushrooms cook, take a medium bowl and combine the cubed 2 pounds stew meat with the seasonings (Kosher salt and pepper, 2 teaspoons dried oregano, 1 teaspoon smoked paprika, 1 teaspoon garlic powder, and 1 teaspoon onion powder). Once the mushrooms have shrunk, spread the seasoned meat in a single layer into the pot.
-
Drizzle everything with 1½ tablespoons Worcestershire sauce and 1½ tablespoons soy sauce. Pour over the 2½ cups beef broth or stock and stir to combine. Secure the lid on the Instant Pot, set the valve to the sealed position, and press the MANUAL button to cook for 18 minutes on High Pressure. Meanwhile, cook the 10 ounces egg noodles in salted water according to package directions, then drain and set aside.
-
Once the 18-minute mark is reached, manually/quickly release the pressure. While the pressure vents, take a small jug and whisk well the 2 tablespoons Gluten-free flour with 3-4 tablespoons of water until smooth. Remove the lid from the pot, pour in the slurry, and give the stew a good stir.
-
Press the SAUTE button again, and set for 3 minutes. Allow the stew to bubble and thicken the sauce. Turn off the Sauté function. Add in the cooked noodles and Freshly chopped parsley, if desired, tossing to combine.
Notes
- Cut beef into even bite-sized cubes for consistently tender results.
- Always sauté onions and mushrooms first to build a deep flavor base.
- Cook noodles separately to prevent them from becoming mushy and to maintain sauce consistency.
- Whisk the flour/cornstarch slurry until completely smooth before adding to avoid lumps in the sauce.
