This Stuffed French Toast is the best breakfast treat! It’s easy to make by spreading peanut butter and strawberry preserves onto slices of thick-cut bread, then dipping them in a vanilla-flavored custard and pan-frying them until they’re golden brown and crisp.

Ingredients

  • 8 large slices of bread loaf (French or brioche recommended)
  • 4 tablespoons strawberry preserves
  • 4 tablespoons peanut butter
  • 2 large eggs
  • 2 tablespoons coconut milk (or almond milk)
  • 1 teaspoon vanilla extract
  • 2 tablespoons melted coconut oil (or vegetable oil)
  • 1 cup fresh strawberries, for serving
  • Maple syrup, optional, for drizzling

Instructions

  1. On a shallow plate, beat the 2 large eggs, 2 tablespoons coconut milk, and 1 teaspoon vanilla extract together until well combined.
  2. Spread one spoonful of peanut butter on 4 of your 8 large slices of bread. Top with equal servings of the 4 tablespoons of strawberry preserves, then sandwich with the remaining 4 slices of bread to create four stuffed sandwiches.

  3. Preheat a non-stick pan over medium heat. Lightly grease the pan with the 2 tablespoons of melted coconut oil, using it sparingly (a cooking oil spray can also be used).
  4. Working in 2 batches, dip each prepared sandwich into the egg mixture. Allow it to absorb for about 10 seconds on one side, then flip and repeat for the other side.
