A wonderfully easy-to-make Greek-flavored pasta dish that’s loaded with fresh, vibrant flavors and ready in under 30 minutes. Perfect for a quick and healthy meal.

Ingredients

  • 8 oz Whole Wheat Penne
  • 1 Tbsp Olive Oil
  • 2 Garlic Cloves, minced or pressed
  • 1/2 Medium Red Onion, sliced
  • 8 oz Roasted Red Peppers, chopped (from a jar is fine)
  • 1 Tsp Dried Oregano
  • 2 Cups Baby Spinach
  • 1 Cup Halved Cherry Tomatoes
  • 1/4 Cup Kalamata Olives, pitted and halved
  • 1/4 Cup Feta Cheese, crumbled
  • 2 Tbsp Toasted Pine Nuts (optional, for garnish)
  • 1 Tbsp Fresh Parsley, chopped (for garnish)
  • 1 Tbsp Fresh Dill, chopped (for garnish)
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Bring a large pot of generously salted water to a rolling boil. Add the pasta and cook according to package directions, typically 6-8 minutes, or until it reaches an al dente consistency (firm to the bite). Drain the pasta, reserving about 1/2 cup of the starchy pasta water, and set aside.
  2. Meanwhile, heat 1 Tbsp olive oil in a large skillet or deep pan over medium-high heat. Add the sliced red onions and minced garlic. Sauté for about 2-3 minutes until the onions begin to soften and become translucent, and the garlic is fragrant (be careful not to burn it).
  3. Stir in the chopped roasted red peppers and continue to cook for an additional 2-3 minutes, allowing their flavors to meld.
  4. Add the fresh baby spinach and dried oregano to the skillet. Cook, stirring frequently, just until the spinach wilts down, which usually takes only 1-2 minutes.
