The Essential Ingredients for Dubai Chocolate Brownies

Crafting these exquisite Dubai brownies requires a selection of high-quality ingredients, each playing a crucial role in achieving the perfect flavor and texture. Below is a detailed list of what you’ll need, along with insights into why each component is important. The full, precise quantities can be found in the comprehensive recipe card later in this post.

ingredients to make Dubai chocolate brownies.
  • Salted Butter: This forms the rich, foundational flavor of our brownie base. The hint of salt is vital for balancing the sweetness and enhancing the deep chocolate notes. If you only have unsalted butter on hand, simply add 1/4 teaspoon of fine kosher salt to your brownie batter for the same delicious effect.
  • Vegetable or Coconut Oil: Incorporating oil into the brownie batter is key to ensuring your brownies remain incredibly moist, fudgy, and chewy – a texture hallmark of a truly great brownie.
  • Granulated Sugar: Providing the perfect level of sweetness, granulated sugar also contributes to the brownie’s soft, tender crumb. Feel free to experiment with alternatives like coconut sugar or light cane sugar if you prefer.
  • Eggs: Beyond binding all the ingredients together, eggs are essential for the fudgy, dense texture that defines these brownies. They contribute to both structure and moisture.
  • Vanilla Extract and Baking Powder: Vanilla extract adds a layer of aromatic depth, complementing the chocolate beautifully. Baking powder ensures a slight lift and contributes to the brownie’s ideal chewiness, preventing it from becoming too dense.
  • All-Purpose Flour: The primary dry ingredient, all-purpose flour provides the necessary structure and a satisfying chew to the brownie. For a slightly different profile, white or whole wheat pastry flour can also be used.
  • Cocoa Powder: For an intense chocolate flavor, unsweetened cocoa powder is non-negotiable. Avoid using hot cocoa mix, which contains added sugar and other ingredients. I highly recommend Dutch process cocoa for its darker color and richer, less acidic chocolate taste, but natural cocoa or raw cacao powder will also yield delicious results.
  • Kataifi Pastry: This unique ingredient, sometimes known as kadayif, is a Middle Eastern shredded phyllo dough. When toasted, it becomes wonderfully crisp, providing the signature crunch reminiscent of the viral Dubai chocolate bar. You can typically find it in the freezer or refrigerated section of Middle Eastern grocery stores.
  • Raw Pistachio Butter or Cream: This is where the vibrant green color and delicate nutty flavor come from. Opt for raw pistachio butter as it retains its natural, vivid green hue. Toasted pistachio butter tends to be a duller green. If using pistachio cream, note that it will add extra sweetness to your brownies. You can easily make your own homemade pistachio butter or pistachio cream if store-bought is hard to find.
  • Tahini Paste: A small amount of tahini adds an exquisite depth of flavor and helps create a smoother, softer texture in the pistachio filling, making it less dense than pure pistachio butter. While optional, I strongly recommend including it for the best results.
  • Heavy Cream or Heavy Whipping Cream: Crucial for making a perfectly thick and luscious ganache. The high fat content of heavy cream is essential for proper emulsification and setting. For a dairy-free option, the thick cream from a can of full-fat coconut milk can be used.
  • Dark Chocolate: The star of the ganache, dark chocolate provides a deep, rich flavor. You can use high-quality chopped dark chocolate or dark chocolate chips. For a sweeter ganache, milk chocolate can be substituted.
  • White Chocolate (optional): A small amount of melted white chocolate is used for decorative drizzling, adding a beautiful contrast and an extra touch of sweetness. Skip it if you prefer a less sweet dessert.

Crafting Your Dubai Chocolate Brownies: A Step-by-Step Guide

Embark on the journey of creating these delectable Dubai Chocolate Brownies with our easy-to-follow instructions. Precision and patience are your best allies in achieving bakery-quality results. Let’s get baking!

Step 1: Prepare the Ganache. Begin by making your dark chocolate ganache, as it requires ample time to cool and thicken to the right consistency. Gently heat the heavy cream in a small saucepan over medium heat until it starts steaming lightly around the edges. Crucially, do not allow it to boil. Once steaming, remove the pan from the heat immediately. Add your chopped dark chocolate or chocolate chips to the hot cream, letting it sit undisturbed for 5 minutes. This allows the chocolate to melt evenly. After 5 minutes, stir the mixture gently with a spatula until it is completely melted, smooth, and glossy. Set this aside to cool at room temperature while you prepare the brownie base and filling.

Step 2: Preheat and Prepare. Preheat your oven to 350°F (175°C). Line a 9 x 9-inch (23 x 23 cm) square baking pan with parchment paper, leaving an overhang on two sides. This overhang will act as handles, making it much easier to lift the cooled brownies out of the pan later.

Step 3: Cream Wet Ingredients. In a large mixing bowl, combine the softened salted butter, vegetable or coconut oil, and granulated sugar. Using an electric mixer, beat these ingredients together on medium speed until the mixture is light, fluffy, and smooth. This aeration is important for a tender brownie. Next, beat in the eggs one at a time, ensuring each is fully incorporated before adding the next. Stir in the vanilla extract until just combined. Be careful not to overmix at this stage.

Step 4: Combine Dry Ingredients. In a separate, medium-sized bowl, whisk together the all-purpose flour, unsweetened cocoa powder, and baking powder. Sift this dry mixture over the wet ingredients in the large bowl. Sifting helps prevent lumps and ensures even distribution. Using a whisk or rubber spatula, gently fold the dry ingredients into the wet ingredients by hand until just combined. It’s crucial not to overmix the batter, as this can lead to tough brownies. A few streaks of flour are acceptable.

Step 5: Bake the Brownie Base. Pour the prepared brownie batter evenly into the parchment-lined pan. Use an offset spatula or the back of a spoon to spread it smoothly. Bake for 22-25 minutes, or until the edges are set and a toothpick inserted into the center comes out with moist crumbs, not wet batter. Remember, brownies continue to cook slightly as they cool, so slightly underbaking can contribute to a fudgier texture. Once baked, remove the pan from the oven and let the brownie cool completely in the pan on a wire rack. This is essential before adding the filling.

Step 6: Prepare the Kataifi Pastry. While the brownie cools, begin making the pistachio filling. Take your kataifi pastry and finely chop it into small, manageable pieces. In a large non-stick pan, add the vegetable or coconut oil and heat it over medium heat. Add the chopped kataifi pastry to the pan. Stir constantly and patiently for 10-12 minutes until the pastry turns a beautiful golden brown and becomes wonderfully crisp. This step cannot be rushed, as even toasting ensures maximum crunch and flavor.

process shot to adding ganache over the filling on brownies and then cutting the brownies into squares.

Step 7: Create the Pistachio Filling. Once the kataifi pastry is perfectly toasted and crispy, remove the pan from the heat. Add the raw pistachio butter (or cream) and tahini paste to the pan with the toasted kataifi. Stir vigorously until all ingredients are thoroughly combined and the crispy kataifi is evenly coated with the rich, creamy pistachio mixture. This combination creates the signature crunchy and nutty layer. Once the brownie base is completely cool, spread this pistachio filling evenly over its surface, ensuring full coverage.

Step 8: Top with Ganache and Chill. By now, your prepared dark chocolate ganache should have cooled and thickened to a spreadable consistency. Spoon the ganache over the pistachio filling, carefully spreading it evenly to create a smooth, glossy top layer. Once the ganache is spread, place the entire pan of brownies into the refrigerator to chill for at least 4 hours. This chilling time is critical, allowing the ganache to firm up properly and all the layers to set, making the brownies easy to slice.

Step 9: Slice and Enjoy! After sufficient chilling, remove the pan from the refrigerator. Using the parchment paper overhangs, carefully lift the chilled brownies out of the pan and place them on a cutting board. Using a sharp knife, slice the large brownie slab into 16 evenly sized squares. For clean cuts, wipe your knife with a hot, damp cloth between each slice. Now, your spectacular Dubai Chocolate Brownies are ready to be savored!

Variations & Tips for Perfect Dubai Chocolate Brownies

Mastering these Dubai Chocolate Brownies is all about a few key techniques and knowing how to personalize them. Here are some expert tips and exciting variations to help you achieve perfection and make this recipe truly your own:

  • Speed Up Ganache Cooling: If you’re short on time and need your ganache to cool faster, you can place it in the refrigerator. However, be aware that it won’t cool evenly. To prevent it from becoming too stiff or lumpy on the edges, stir the ganache every 10-15 minutes until it reaches a smooth, spreadable consistency.
  • Avoid Boiling the Cream for Ganache: When preparing the ganache, it is absolutely critical not to let the heavy cream come to a rolling boil. Overheated cream can cause the chocolate to “split” when added, resulting in an oily, grainy, and unappealing ganache. Heat it just until small bubbles form around the edge and steam rises, then remove from heat immediately.
  • Evenly Chop Your Chocolate: If you’re using a chocolate bar instead of chips for the ganache, make sure to chop it into small, uniform pieces. This ensures that the chocolate melts consistently and smoothly when combined with the hot cream, creating a velvety ganache.
  • Fixing a Split Ganache: Don’t despair if your ganache looks oily or separated! It can often be rescued. Slowly whisk in 1 tablespoon of boiling water into the split ganache. Continue whisking vigorously until the ganache comes back together, becoming shiny and smooth again.
  • Flavorful Nut Butter Swaps: While pistachio butter is traditional, feel free to experiment with other nut butters for a different flavor profile. Natural peanut butter, almond butter, or even hazelnut butter (like Nutella, but be mindful of added sugar) can create delicious variations.
  • Homemade Pistachio Options: If raw pistachio butter isn’t available in your local stores, consider making your own! It’s surprisingly simple and yields the freshest flavor. Many recipes exist for homemade pistachio butter or pistachio cream.
  • Spice It Up: For an extra layer of warmth, consider adding a pinch of ground cardamom or cinnamon to your pistachio filling. These spices beautifully complement the nutty flavors and add an authentic Middle Eastern touch.
  • Decorative Touches: Beyond white chocolate drizzle, you can garnish your finished brownies with finely chopped pistachios, a sprinkle of edible gold dust, or a few strands of extra toasted kataifi pastry for an even more impressive presentation.

Frequently Asked Questions About Dubai Chocolate Brownies

How do I store Dubai brownies?

These brownies keep wonderfully! Store them in an airtight container in the refrigerator for 3-5 days. For longer storage, you can freeze them for up to 3 months. If frozen, be sure to thaw them in the fridge overnight before serving to enjoy their best texture and flavor.

Why has my ganache split?

A split ganache, which appears oily or separated, typically occurs if your heavy cream was too hot when you added the chocolate. It’s crucial not to boil the cream; simply heat it until it’s steaming and bubbles are just starting to form around the edges.

How do I fix a split ganache?

Don’t worry, a split ganache can often be saved! Add 1 tablespoon of boiling water to the ganache and beat it with electric beaters for about 1 minute. Continue mixing until it becomes shiny and smooth again.

Can I use a brownie mix?

Absolutely! While this recipe provides a fantastic homemade brownie base, if you have a favorite boxed brownie mix that you prefer, feel free to use it. Just prepare the mix according to package directions, then follow the steps for the pistachio filling and ganache topping in this recipe.

Can I use oil instead of butter in the brownie base?

Yes, you can certainly swap the butter for an equal amount of coconut oil or vegetable oil in the brownie recipe. This can also make for a slightly more moist and dense brownie, depending on the oil used.

Where can I find kataifi pastry?

Kataifi pastry, also known as kadayif or shredded phyllo dough, is most commonly found in Middle Eastern grocery stores. Look for it in the refrigerated or freezer sections. If you can’t find it locally, some specialty online food stores might carry it.

Is raw pistachio butter necessary, or can I use roasted?

Raw pistachio butter is recommended for its vibrant green color and milder, fresher pistachio flavor, which is characteristic of the viral Dubai chocolate. Roasted pistachio butter will have a darker, more intense flavor and a less vibrant green hue, but it can still be used if raw is unavailable. The taste will be slightly different.

Ingredients

For the chocolate brownie:

  • 1/2 cup salted butter, softened at room temp
  • 3 tablespoons vegetable oil, or coconut oil
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder

For the filling:

  • 8 ounces kataifi pastry dough, shredded phyllo dough
  • 2 tbsp vegetable or coconut oil
  • 10 ounces raw pistachio butter or cream, will be sweeter if using cream
  • 2 tablespoons tahini paste

For the ganache topping:

  • 8 ounces dark chocolate chips or chopped dark chocolate
  • 1/2 cup heavy cream or heavy whipping cream
  • 2-3 tablespoons white chocolate chips, melted (optional, for decoration)

Instructions

  • Start by making the ganache topping, as it needs some time to cool and thicken.

To make the ganache topping:

  1. Heat the 1/2 cup heavy cream or heavy whipping cream in a small saucepan, but don’t boil! Just when it’s about to simmer, remove from heat. Add in the 8 ounces dark chocolate chips or chopped dark chocolate and allow to sit for 5 minutes.
  2. Mix with a spatula until the chocolate is fully melted. Allow it to cool on the counter while making the brownie and filling.

To make the brownie:

  1. Preheat the oven to 350°F and line a 9×9-inch baking pan with parchment paper.
  2. In a mixing bowl, use an electric mixer and beat the 1/2 cup salted butter (softened), 3 tablespoons vegetable oil, and 1 cup granulated sugar. Whisk until well combined. Add 2 large eggs and 2 teaspoons vanilla extract then mix until smooth.
  3. In a small bowl, combine 1 cup all-purpose flour, 1/2 teaspoon baking powder, and 1/2 cup unsweetened cocoa powder. Sift this mixture over the large mixing bowl; Whisk by hand just until the batter is combined. Don’t over-mix!

Notes

Variations & Tips:

  • Speed up cooling of the ganache: Refrigerating speeds up cooling, but the ganache will not cool evenly. Stir it a few times as it sets in the refrigerator, so it remains even and smooth.
  • Grainy ganache? If, after cooling, the ganache looks a bit grainy, use an electric whisk and mix until smooth and shiny, about 1 minute.
  • When making the ganache, it’s important not to boil the cream, as this will make it too hot, which can cause the ganache to split once you add the chocolate.
  • If using chopped chocolate, make sure you chop it evenly into small pieces so that it melts evenly into the cream.
  • Can’t find pistachio butter in the store? Try my homemade pistachio butter or my recipe for pistachio cream.
  • Swap the pistachio butter for natural peanut butter or hazelnut butter for a different flavor.

Storage:

  • Fridge: Store the brownies in an airtight container in the fridge for 3-5 days.
  • Freezer: Freeze the brownies in an airtight container for up to 3 months. Thaw in the fridge overnight before eating.
