Why Choose Brussels Sprouts as a Pasta Alternative?
Brussels sprouts are an incredible superfood, packed with vitamins K and C, fiber, and antioxidants. When cooked correctly, they offer a delightful texture that complements the creamy Alfredo sauce beautifully, providing a satisfying bite that pasta often delivers. They absorb the rich flavors of the sauce, becoming tender and delicious. Opting for Brussels sprouts not only slashes the carbohydrate count but also significantly increases the nutritional value of your meal, making it a smart choice for a balanced diet.
Ingredients for Your Healthy Chicken Alfredo Skillet
To create this mouthwatering, low-carb Chicken Alfredo with Brussels Sprouts, you’ll need a selection of fresh, simple ingredients. These components come together to form a rich, creamy sauce and perfectly cooked chicken and vegetables, creating a harmonious and utterly delicious meal.
- Boneless, Skinless Chicken Breast: Cut into convenient bite-sized pieces. Chicken thighs can also be used for a slightly richer flavor, though chicken breasts are leaner.
- Avocado Oil or Olive Oil: For sautéing the chicken and Brussels sprouts, providing a healthy fat base.
- Fresh Brussels Sprouts: Trimmed and halved, or quartered if particularly large, to ensure even cooking and better sauce absorption.
- Milk of Choice: Whether you prefer dairy milk (like 2% for a lighter touch) or a non-dairy alternative (such as almond or oat milk), it will form the base of your creamy sauce.
- Fresh Garlic Cloves: Minced, to infuse the Alfredo sauce with aromatic depth. The more, the merrier for garlic lovers!
- Freshly Squeezed Lemon Juice: A touch of acidity to brighten the sauce and cut through its richness, adding a vibrant zing.
- Cornstarch: Our secret weapon for achieving a perfectly thickened, velvety Alfredo sauce without the need for heavy cream or flour.
- Shredded Cheese: A blend of Parmesan and a touch of mozzarella or white cheddar can elevate the flavor and creaminess. Freshly grated Parmesan is always recommended for the best results.
- Fresh Chopped Parsley: For garnish, adding a burst of fresh flavor and vibrant color.
- Salt and Pepper: Essential seasonings, adjusted to your personal taste, to enhance all the ingredients.
Crafting Your One-Pan Chicken Alfredo with Brussels Sprouts: A Simple Guide
You’ll be amazed at how effortlessly this one-pan chicken alfredo recipe comes together, making it an ideal choice for quick weeknight dinners. Follow these straightforward steps to create a dish that’s both healthy and incredibly flavorful:
- Begin by heating 1 tablespoon of avocado or olive oil in a large skillet over medium heat. Once shimmering, add your bite-sized chicken pieces. Cook the chicken for about 5-6 minutes, or until it’s beautifully golden brown and fully cooked through. Season with a generous pinch of salt and freshly ground pepper, then remove the chicken from the skillet and set it aside on a plate.
- Add the remaining tablespoon of oil to the same skillet. Introduce the trimmed and halved Brussels sprouts, sautéing them for 3-4 minutes until they begin to brown and develop a slight crispness. This caramelization adds a wonderful depth of flavor and texture to the dish.
-

- While the Brussels sprouts are cooking, prepare your luscious Alfredo sauce base. In a small bowl, whisk together your milk of choice, minced garlic, freshly squeezed lemon juice, another pinch of salt and pepper, and cornstarch. Whisk vigorously until the mixture is smooth and the cornstarch has fully dissolved – this is key for a lump-free sauce.
-

- Pour this creamy milk mixture over the sautéed Brussels sprouts in the skillet. Stir well, ensuring to scrape up any flavorful browned bits from the bottom of the pan, which will enrich your sauce. Reduce the heat to low and let the sauce gently simmer for 3-4 minutes, or until it thickens to your desired consistency and the Brussels sprouts are tender-crisp.
- Return the cooked chicken back into the pan with the thickened sauce and Brussels sprouts. Stir in the shredded cheese until it’s completely melted and incorporated, creating a decadent, cohesive dish. Continue to cook for another 4-5 minutes, allowing all the flavors to meld and ensuring everything is thoroughly heated.
- Remove the skillet from the heat. Garnish generously with freshly chopped parsley and an extra sprinkle of ground pepper, if desired. Serve immediately and savor every guilt-free bite!

Tips and Variations for Your Healthy Chicken Alfredo
This versatile healthy chicken alfredo recipe offers plenty of room for customization to suit your preferences and dietary needs:
- Chicken Choice: While boneless, skinless chicken breast is used for its leanness, feel free to use chicken thighs for a slightly richer, more succulent chicken. Just ensure they are cut into uniform, bite-sized pieces for even cooking.
- Vegetable Swaps: Not a fan of Brussels sprouts? No problem! This recipe is incredibly adaptable. Replace them with other low-carb vegetables like broccoli florets, cauliflower, green beans, or even zucchini noodles (zoodles). Adjust cooking times as needed for your chosen vegetable.
- Prevent Dry Chicken: The key to tender, juicy chicken is to avoid overcooking it. Cook until just golden brown and cooked through, then set aside. It will finish cooking briefly when returned to the sauce.
- Milk Preference: I often use 2% milk for a good balance of creaminess and lightness, but any milk (dairy or non-dairy) will work. For an even richer sauce, a splash of half-and-half or light cream can be used.
- Cheese Varieties: Experiment with different cheeses! A blend of Parmesan and Pecorino Romano adds a sharper, saltier kick, while a touch of provolone or fontina can enhance creaminess.
- Spice It Up: For a hint of heat, add a pinch of red pepper flakes to the sauce.
Frequently Asked Questions About Low-Carb Chicken Alfredo
How do you season chicken for chicken alfredo?
The chicken for this alfredo typically doesn’t require excessive seasoning, as much of the flavor comes from the rich sauce itself. Often, simple salt and pepper are sufficient. However, to add more depth, you can incorporate lemon pepper, dried rosemary, thyme, onion powder, or garlic powder before cooking.
Can I use shrimp instead of chicken?
Absolutely! This recipe is highly flexible. Shrimp makes an excellent substitute for chicken, offering a lighter protein option that cooks very quickly. Adjust cooking times accordingly to prevent overcooking the shrimp.
Can I use broccoli instead of Brussels sprouts?
Yes, certainly! If Brussels sprouts aren’t to your liking, broccoli florets are a fantastic alternative. You can also use cauliflower florets, asparagus, or even bell peppers. Simply follow the same sautéing steps, adjusting the cooking time until the vegetables are tender-crisp.
How do you store leftover chicken alfredo with Brussels sprouts?
Store any leftovers in an airtight container in the refrigerator for up to 3 days. When ready to enjoy, reheat gently in the microwave or on the stovetop over low heat, adding a splash of milk or chicken broth if the sauce has thickened too much.
