Essential Tips for Perfect Cottage Cheese Bagels

Achieving bakery-quality cottage cheese bagels at home is simple with these expert tips:

  • Explore a World of Toppings: Don’t limit yourself! While Everything Bagel seasoning is a popular choice, experiment freely. Try classic sesame seeds or poppy seeds, savory garlic and herb mixtures, or even a sprinkle of cinnamon sugar for a delightful sweet bagel experience. A dash of flaky sea salt can also elevate any topping.
  • Always Strain Excess Liquid from Cottage Cheese: This step is critical! If your cottage cheese appears watery, place it in a fine-mesh sieve or a cheesecloth-lined colander and allow excess liquid to drain for a few minutes. Too much moisture will result in a sticky, difficult-to-handle dough and a potentially dense bagel.
  • Allow the Dough to Rest Briefly: After combining your ingredients, cover the dough and let it rest for about 5 minutes. This short rest period allows the flour to fully hydrate, making the dough less sticky and much easier to knead and shape, contributing to a smoother final texture.
  • Resist the Urge to Overwork the Dough: Gentle handling is key to tender bagels. Mix the dough just until the ingredients are combined and a cohesive ball forms. Excessive kneading can develop too much gluten, leading to tough, rubbery bagels instead of soft, chewy ones.
  • Utilize Parchment Paper for Best Results: Lining your baking sheet with parchment paper prevents the bagels from sticking, ensures even browning, and makes cleanup incredibly easy. It’s a simple step that saves a lot of hassle.
  • Understand the Cooling Process: It’s natural for cottage cheese bagels to feel quite soft when they first come out of the oven. This is because cottage cheese absorbs moisture. Allow them to cool on a wire rack for at least 10-15 minutes before slicing. This crucial cooling time allows the internal structure to set, resulting in the desired chewy texture. Slicing too early can lead to a gummy interior.

Simple Ingredients for Delicious Bagels

You’ll be amazed at how few ingredients are required to create these incredible homemade bagels. Gather these essentials:

A selection of ingredients laid out on a surface, including cottage cheese, flour, an egg, and a jar of everything bagel seasoning.
All the simple ingredients you need to create your high-protein cottage cheese bagels.
  • Cottage Cheese: The star of the show! For the best flavor and a wonderfully moist interior, we recommend using full-fat or 2% cottage cheese. Remember to drain any excess liquid if your cottage cheese seems particularly watery, as this will prevent your dough from becoming too sticky.
  • Self-Rising Flour: This convenient ingredient provides the necessary lift and structure for your bagels without the need for yeast or additional leavening agents. It makes the recipe incredibly quick and straightforward. (Don’t have self-rising flour? Check the recipe card below for an easy substitution using all-purpose flour, baking powder, and salt!).
  • Egg: A single egg is used to create an egg wash, which is brushed over the bagels just before baking. This step is optional but highly recommended as it contributes to a beautiful golden-brown crust and a lovely sheen. It also helps toppings adhere securely to the bagel surface.
  • Your Favorite Toppings: This is where you can truly personalize your bagels! Classic options include Everything Bagel seasoning, toasted sesame seeds, poppy seeds, or even flaky sea salt. For a sweeter treat, consider cinnamon sugar. Have fun with it!

How to Make Quick & Easy Cottage Cheese Bagels

Video Tutorial

Before you begin, preheat your oven to 375°F (190°C) and prepare a baking sheet by lining it with parchment paper. This will ensure your bagels don’t stick and cook evenly.

Blending cottage cheese until smooth is the first step for a tender dough.

1️⃣ Blend the Cottage Cheese

In a blender or food processor, add your cottage cheese. Blend it until it reaches a completely smooth, creamy consistency, with no curds remaining. This step is crucial for achieving a uniform and tender bagel dough. If your cottage cheese has any excess liquid, remember to strain it through a fine-mesh sieve before blending to ensure the dough isn’t too wet.

2️⃣ Combine Ingredients for the Dough

Transfer the smooth, blended cottage cheese into a large mixing bowl. Add the self-rising flour to the bowl. If you’re using a substitute for self-rising flour (1 cup all-purpose flour + 1½ teaspoons baking powder + ¼ teaspoon salt), add that mixture now. This forms the base of your quick and easy bagel dough.

Process shot showing dough being kneaded by hand and then divided into four equal parts.
Gently kneading and dividing the dough to prepare for shaping.

3️⃣ Knead and Perfect the Dough

Using your clean hands or a sturdy spatula, begin to mix the flour and blended cottage cheese until they are well combined and a cohesive dough ball starts to form. The dough may feel a bit sticky at this stage, which is normal. Transfer the dough onto a lightly floured flat surface. Knead it gently for just a few times, perhaps 1-2 minutes, until it’s smooth enough to handle. If the dough remains overly sticky, add an additional 1-2 tablespoons of flour, one tablespoon at a time, until it’s manageable. Avoid over-kneading to keep the bagels tender.

4️⃣ Shape Your Bagels

Once your dough is ready, divide it into 4 equal portions. Take each portion and roll it into a smooth ball. Then, using your thumb or index finger, gently poke a hole in the center of each dough ball. Carefully stretch and pull the dough around the hole to enlarge it and create the classic bagel shape. Ensure the hole is relatively generous, as it tends to shrink during the baking process.

5️⃣ Brush with Egg Wash and Add Toppings

In a small bowl, lightly whisk the egg to create an egg wash. Using a pastry brush, generously brush the egg wash over the top and sides of each shaped bagel. This will give your bagels a beautiful golden-brown color and a slight sheen once baked. Immediately after brushing, sprinkle your chosen toppings – whether it’s Everything Bagel seasoning, sesame seeds, poppy seeds, or another favorite – over the egg-washed surface to ensure they adhere well.

6️⃣ Bake Until Golden and Cool

Carefully place your topped bagels onto the prepared parchment-lined baking sheet, ensuring there’s enough space between each for even heat circulation. Bake in the preheated oven for 25-28 minutes, or until the bagels are beautifully golden brown all over and feel firm to the touch. Once baked, remove the sheet pan from the oven and transfer the hot bagels to a wire rack to cool. It is absolutely essential to allow the bagels to cool for at least 10-15 minutes before slicing. This cooling period allows the interior of the bagels to set properly, preventing a dense or gummy texture. Once cooled, slice, spread, and enjoy your delicious homemade cottage cheese bagels!

How to Make Cottage Cheese Bagels in the Air Fryer

For an even quicker cooking method, these cottage cheese bagels can be perfectly cooked in an air fryer, resulting in a wonderfully crisp exterior and a soft interior. Here’s how:

  1. Prepare the Air Fryer Basket: Lightly spray your air fryer basket with cooking oil or, for easier cleanup and to prevent sticking, use parchment paper liners specifically designed for air fryers. This ensures the bagels won’t adhere to the basket during cooking.
  2. Arrange and Air Fry: Place the shaped and topped bagels in a single layer within the air fryer basket, making sure to leave some space between each bagel for optimal air circulation. Air fry the bagels at 350°F (175°C) for 10-12 minutes. For even cooking and browning, it’s a good idea to flip them halfway through the cooking time.
  3. Check for Doneness: The bagels are ready when they have achieved a beautiful golden-brown color on both sides and feel firm to the touch. The exact cooking time may vary slightly depending on your air fryer model, so keep an eye on them towards the end of the cooking process.
  4. Cool Slightly Before Serving: Once cooked, carefully remove the bagels from the air fryer. Allow them to cool on a wire rack for about 5 minutes before slicing. This brief cooling period is important for the inside of the bagel to finish setting, ensuring a pleasant texture.

Delicious Variations to Try

These cottage cheese bagels are incredibly adaptable! Feel free to customize them to suit your taste preferences or dietary needs:

  • Whole Wheat Version: For an added fiber boost and a nuttier flavor, swap half of the self-rising flour (or all-purpose flour) with whole wheat flour. This will create a denser, heartier bagel.
  • Gluten-Free Alternative: Easily make these bagels gluten-free by using a 1:1 gluten-free all-purpose flour blend. If your blend does not already contain leavening agents, remember to add 1½ teaspoons of baking powder and ¼ teaspoon of salt per cup of flour, as outlined in the recipe notes.
  • Dairy-Free Option: To make these bagels dairy-free, substitute the cottage cheese with an equal amount of thick, unsweetened plain cashew yogurt or another plant-based, thick yogurt alternative. Ensure it’s very thick and drain any excess liquid if necessary, as results may vary slightly.
  • Savory Bagels: Elevate the savory profile by mixing in finely chopped fresh herbs like chives, dill, or rosemary directly into the dough before shaping. Shredded cheese (cheddar, mozzarella, or a blend) can also be incorporated into the dough or sprinkled on top with the egg wash for a cheesy delight.
  • Sweet Bagels: For a sweet treat, mix a tablespoon of sugar and a teaspoon of cinnamon into the dough. Instead of savory toppings, brush with egg wash and sprinkle with cinnamon sugar before baking. A drizzle of glaze after baking would make them irresistible!
  • Everything but the Bagel Seasoning Blend: If you don’t have a pre-made blend, you can make your own with poppy seeds, sesame seeds (white and/or black), dried garlic flakes, dried onion flakes, and a pinch of flaky sea salt.

Common Questions About Cottage Cheese Bagels

Can I use gluten-free flour to make these bagels?

Absolutely! You can successfully make these bagels gluten-free. If you’re replacing self-rising flour with a gluten-free blend, ensure your blend contains leavening agents. If not, you will need to add 1½ teaspoons of baking powder and ¼ teaspoon of salt per cup of gluten-free flour to achieve the correct lift and texture.

Can I freeze these bagels for later?

Yes, these cottage cheese bagels freeze beautifully! Once baked and completely cooled, wrap individual bagels tightly in plastic wrap, then place them in a freezer-safe bag or container. They can be frozen for up to 2 months. To enjoy, simply reheat them in a toaster, toaster oven, or conventional oven until warmed through and slightly crisp.

Is it possible to make these Dairy-free?

Yes, with a minor adjustment. You can substitute the cottage cheese with a thick, unsweetened plant-based yogurt alternative, such as cashew or almond yogurt. Ensure it’s very thick and drain any excess liquid. Please note that the final texture might be slightly softer compared to using dairy cottage cheese, but they will still be delicious.

Why did my bagels turn out dense or hard?

There are a couple of common reasons for dense bagels. The most frequent culprit is too much liquid in the cottage cheese; make sure to thoroughly strain it if it appears watery. Another reason could be over-kneading the dough. Cottage cheese bagel dough only needs to be mixed until just combined and kneaded gently for a short period. Overworking the dough develops too much gluten, leading to a tough, dense texture.

Do I need self-rising flour, or can I use regular flour?

You absolutely do not need self-rising flour if you don’t have it on hand! You can easily make your own self-rising flour substitute. For every 1 cup of all-purpose flour, simply whisk in 1½ teaspoons of baking powder and ¼ teaspoon of salt. This homemade blend works perfectly in this recipe.

Can I use Greek Yogurt instead of cottage cheese?

Yes, Greek yogurt can be used as a substitute for cottage cheese in this recipe, using the same amount. However, it’s important to note that Greek yogurt will typically yield a softer textured bagel. Cottage cheese, when blended smooth, contributes to a notably chewier bagel, which many prefer for its classic bagel-like mouthfeel.

How to Store Your Homemade Cottage Cheese Bagels

Proper storage is key to keeping your delicious homemade bagels fresh and enjoyable:

  • Room Temperature: Store baked and cooled bagels in an airtight container or a sealed plastic bag at room temperature for up to 2 days. For best results, slice them just before serving.
  • Refrigerator: To extend their freshness, transfer the bagels to an airtight container and store them in the refrigerator for up to 4-5 days. Before serving, we recommend toasting them to restore their delicious texture and warmth.
  • Freezer: For longer storage, wrap each individual cooled bagel tightly in plastic wrap, then place them in a freezer-safe bag or container. They will keep well in the freezer for up to 2 months. Thaw at room temperature or reheat directly from frozen in a toaster or oven.

Cottage Cheese Bagels (High-Protein & No Yeast!)

By: Rena | Servings: 4 bagels

Prep: 5 mins | Cook: 25 mins | Total: 30 mins

Easy to make protein-packed bagels made with cottage cheese and self-rising flour, topped with everything but the bagel seasoning, and then baked until golden brown.

bagels on a plate topped with everything but the bagel seasoning.

Ingredients

  • 1 Cup Full-fat cottage cheese (2% works too, strained)
  • 1 Cup Self-rising flour
  • 1 egg (used as egg wash if using toppings)
  • Everything Bagel seasoning (Optional topping, sesame seeds, etc.)

Instructions

  1. Preheat oven to 375°F (190°C) and line a sheet pan with parchment paper.
  2. In a blender, add the 1 Cup Full-fat cottage cheese and blend until smooth. If your cottage cheese has excess liquid, strain it first.
  3. Transfer the cottage cheese to a large mixing bowl and add the 1 Cup Self-rising flour.
  4. Mix the flour and blended cottage cheese with your hands or a spatula until well combined and a round dough ball is formed. The dough may be a bit sticky. Add 1-2 tablespoons of flour if needed to handle the dough.
  5. Transfer onto a lightly floured flat surface and knead a few times until you are able to form a ball. If it’s too sticky, add flour 1 tablespoon at a time to the dough so it’s easier to handle.
  6. Divide the dough into 4 equal parts. Form a ball, create a hole in each one using your finger, and gently pull it apart to form a bagel shape.
  7. Brush some egg wash (from 1 egg) over each bagel and top with sesame seeds or Everything Bagel seasoning.
  8. Place the bagels onto the prepared sheet pan and bake for 25-28 minutes or until golden brown.
  9. Allow the bagels to cool for 10-15 minutes before slicing. Enjoy.

Notes

  • If you do not have self-rising flour, you can swap it with 1 cup of all-purpose flour. But you will need to add 1-1/2 teaspoons of baking powder with 1/4 teaspoon of salt.
  • You must allow the bagels to cool for a good 10-15 minutes before slicing them. This cooling step allows the bagels to set and achieve their desired soft and chewy texture.
  • I also made these bagels using low-fat (4% fat and 2%) small curd cottage cheese, and they came out just fine. I do recommend straining the cottage cheese well if it has any liquids, regardless of fat content.
